We've evolved our flagship farmhouse ale Trillium to an approachable stainless fermented wild ale fermented with our native New England wild culture. Trillium features Valley Danko Rye, Flaked Wheat, and Pilsner Malt and has a bright lemony citrus aroma as well as notes of dried grass and cider. The palate begins bright and tart and ends dry with subtle flavors of peach, and wet hay funk.

Clear gold with a sparkling central pillar in the body building a soft fluffy bright white head settling to a tall persistent blanket.
My first taste indicates Altoids characteristics and I'm a little hesitant to continue to dig in at first. The soft effervescence is fleeting, and the light body has a tingly feel that brings up additional hay, funk, grass and lemon and so my interest is piqued. Herbal wildflower develops further and then it becomes unusually easy drinking and quenching, as flavors of apple juice and grape juice kind of boggle my mind.
This beer is quite the rollercoaster. It's certainly different. Oddly tasty.

Pours orange and hazy. Good sour smell with lemon and peach and grass. Great balance of fuitiness and farmhouse sour. Medium bodied crisp beer - not too sour and well balanced.

This one pours a fairly hazy and creamy looking orange, with a small head, and lots of lacing.
This smells mostly like sour and funky lemon and peach, with some grassy/hay funk as well.
This turned out really well for me. It's super fruity and funky, with lots of hoppy peach and grapefruit character, a nice lemony funk, and a hint of herbal/grassy character.
This is medium bodied, crisp and slightly creamy, with a good level of carbonation.
This is simple, but clearly well crafted and very tasty.

Pours a clear pale gold in color with a touch of chill haze. There is a fizzy, frothy white head that rapidly disappears completely. Aroma and taste are both lightly tart with a bright acidity that reminds me of lemons. There is also a light funkiness. The beer finishes dry and relatively balanced. Medium-light bodied with very high carbonation that borders in effervescent despite the lack of head. Overall this is a very drinkable beer. Much more drinkable than their other wild ales. I’d like to see this wild culture used much more often.

Not my preferred style of beer. Went out on a limb to try a friends suggestion but literally wanted to spit it out. I'll stick with the delicious Congress Street!!! To each their own.

Smells a bit lambicy upon pour with barnyard funk, dusty horseblanket, acetic vinegar, toasty hay and straw notes aplenty, followed by a deeper dive into notes of tart apple cider, hints of white wine, lemony citrus, peach, bready crackery grainy malts, peppery cinnamony baking spice, and earthy floral grassy herbal hops. Tastes real tart and acidic, sour and lemony with vinous notes of white wine and dry apple cider, grapefruity orange citrus, peach, white grape, slight acetic vinegar, mild barnyardy farmhouse funk, toasty hay, straw, bready crackery grainy malts, peppery baking spice, and earthy floral grassy herbal hops. Feels medium plus bodied, creamy with smooth moderate high carbonation. Overall a nice farmhouse style wild ale.
