We've evolved our flagship farmhouse ale, Trillium, into an approachable stainless fermented wild ale featuring our native New England wild culture.
For this iteration of Trillium, made with Valley Danko Rye, Flaked Wheat, and Pilsner Malt, we added a heavy dry hop of Citra to enhance a bright lemony citrus aroma with herbacious, floral notes of lemongrass. Crisp, refreshing flavors of lime rickey, and white wine on the palate. Well balanced with moderate acidity and a medium body.
MALT: Pilsner, Flaked Wheat, Valley Danko Rye
HOPS: Golding, Citra
YEAST: Native New England Culture

Some funky yeast, big lychee, pineapple, peach, mango, orange citrus, grapefruit, lime, sweet white wine, tart cider, creamy bready crackery malts, wild flowers with dank grassy hops

Golden and slightly hazy with moderate carbonation, and 3 fingers of white, foamy head.
Smells dank, slightly funky, green leaf, herbal, onion, hints of yellow hard candy, slightly fruity, pungent, and tannic with some drying quality on the nose.
Sour with a hint of sweetness making it slightly less than bone dry. White wine vinegar, funk, lemon juice, a hint of the dankness, and a little green leaf.
Medium to light body, with moderate to low carbonation, moderately puckering but missing the tannic quality that was on the nose.
Got this at Trillium in Boston, MA, in January. Drinking on Lake Rousseau, May 7th, 2018. Great nose, a little lacking expectation on the tongue, but excellent regardless.

Sour with a hint of sweetness making it slightly less than bone dry. White wine vinegar, funk, lemon juice, a hint of the dankness, and a little green leaf.
Medium to light body, with moderate to low carbonation, moderately puckering but missing the tannic quality that was on the nose.

Deep Ellum draft during EBF weekend.
A- Mostly clear golden pour draft to a chalice with a two finger frothy white head. The cap has good retention and leaves rare spotty lace.
S- Hops, lactic tartness and funk. Very bright with the Citra providing lime, grapefruit and stone fruit to marry the lactic acid and funky tropical Brett.
T- Mostly follows up on the aroma with a similar build but a slight shift to the hops and a bit less funk. Lime, tangerine, grapefruit and stone fruits play off yogurty lactic acid, cherry pie Brett funk, tropical hints and whole grains.
MF- Silky and smooth light-medium body with high foamy carbonation. Fluffy texture and a sour finish with some hop bitterness.
Citra plays very well with the fermentation that the bugs bring for Trillium in this brew.
