Super Soak: our Soak series amped up with a bigger malt bill, increased alcohol, and twice the amount of fruit as Soak. While still rather sour, the higher ABV in Super Soak serves to somewhat temper the acid formation by the lactobacillus.

We ferment the 60% wheat base beer in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the foeders to “soak” for a deep extraction of unique colors, aromatics, and flavors through refermentation.
Plum Super Soak pours a blushing pink color and moderate haze. An inviting nose of lightly toasted oak, overripe plum, and a subtle warm spice gives way to a medium-light body complemented by a tart plum and raspberry palate. Plum makes for an incredibly satisfying iteration in the Super Soak series!

Look - hazy apricot color with a nice foamy white head
Smell and taste - tart sour fruity plum with some cinnamon
Feel - medium body and carbonation
Overall - not bad

Had it on draft in Boston yesterday: tart, full flavored, and extremely well balanced. I had asked for something “a not too fruity sour” and this was spot on

Spectacular appearance. The hazy, ruby red grapefruit colored body was topped by a rocky, three-finger tall, bright white crown that slowly fell to a bubbly mass. A sheet of thick, drippy lacing coated the glass from top to bottom.

The aroma was also stellar. Big ripe stone fruit and berry notes. I might not pick out the plum specifically, but I definitely got some strawberry, blackberry and/or boysenberry. Really crisp and bright. Powdery and dry. Fairly tart but also surprisingly sweet. Slightly musty with a touch of oaky barrel.

The flavor profile was just as amazing. Juicy, ripe plum notes came through strong. Some strawberry was detectable as well. Maybe a touch of raspberry. Crisp and tart in the center. Wheaty and lemony. Fairly acidic. More tartness and sour berry-like notes on the back end and the finish. A crisp, dry yeastiness was also noticeable.

Fantastic creamy, frothy and smooth mouthfeel. Fuller bodied for the style. The liquid contained a fairly zippy effervescence that gave the liquid a terrific tongue blanketing fluffiness. By the drink’s end, I could feel the acids in the beer doing their thing on my teeth.

I find most of Trillium’s fruit-infused wild ales to be excessively tart and acidic, but Plum Super Soak was outstanding in every regard. Hopefully they figure out how to make their other fruited sours this good.
