Collaboration with J. Wakefield Brewing
We teamed up with Miami's J. Wakefield Brewing to create another Italian dessert inspired decadent stout! This time we captured elements of Tiramisu in this Imperial Stout with five hundred pounds of Lady Fingers from Salem, Massachusetts based AJs Bakery, Madagascar Bourbon Vanilla Beans, Brown Sugar, and coffee from Mostra & Barrington.
Tiramisu leads with powerful aromas of deeply roasted coffee, rich dark chocolate, vanilla, and a backbone of freshly baked cake and subtle caramelized brown sugar. The palate continues with more dark chocolate, vanilla, brownie batter, and heavy, creamy coffee. A thick, viscous, latte-like mouthfeel leaves a coating on the glass and lingering, satisfying sweetness in the mouth.
MALT: Maris Otter, C80, C120, Flaked Oats, Black Malt, Chocolate Malt, Munich Malt, White Wheat, Dark Brown Sugar, Lactose Sugar, Lady Fingers
HOPS, ETC: Hop Extract

Can’t say it bowled me over like the Lebowski going for a strike. Actually, it has a bit of a rancid/bug killer taste to it. Raul like “What?” when a Kershaw curve hits all kinds of plate but Angel Hernandez calls it a ball anyway.

Drank 10.18.19 - aged nicely but can't say I was blown away by it.
Semi-aggressive pour led to a nice chocolate brown head that eventually settled out. Remained flat thereafter.
Smell was not really distinguishable, probably some coffee but that's not really my strong point so I'll just give it a 4.25.
Taste was dominated by roasty coffee, maybe a little booze as it warmed; I couldn't get any vanilla.
Feel was not as thick as some other Trillium stouts, but at the same time, not bad.
Overall, too dominated by roasty coffee for me, and I'm not a fan of roastiness in stouts or porters so I can't say it really worked for me. On the other hand, it appeared to be a nicely executed beer and held up well after 1.5 years on the clock for a pastry stout.
