Soak: our line of sour wheat ales, aged in oak, featuring a variety of single fruit additions. We place a base brew crafted with 60% wheat grist in 600L oak puncheons for 3 months with fermentation duties shared gracefully between lactobacillus and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the barrels to “soak” for enhanced extraction of unique colors, aromatics, and flavors. Delightfully acidic, but not funky, our Soak series is an approachable sequence of wild offerings that we are proud to share.
Black Currants bring a slightly hazy ruby red hue and a pleasantly tart and deep profile of dark mixed berry compote, underpinned by a light tannic structure. Black Currant Soak is dry with undertones of oak and wheat accentuated by an effervescent carbonation for a crisp, quenching finish.
MALT: Pilsner, White Wheat, Flaked Wheat
HOPS: US Goldings

Just uncorked intense smell of wild berries (I would have said just black currant, but also blackberry probably).
Ruby color, foam (tasty, red fruit of the forest) initially more abundant than I expected, but after a while the beer rises, returning it to a small "hat" that accompanies the whole drink.
The drink releases a taste of berries, in this case currant, but again I find a taste very similar to blackberry, also reflections that refer to blueberry.
The note is sour, more than acid in the strict sense. A minimal and delicate astringency that stands out in the taste of berries.
On the final pleasant intervention of woody and barrel scents that give a truly high-class closure to this beer in which all the elements of which it is prized are detectable to the senses (especially to the taste) and are in perfect balance with each other.
A very tasty aftertaste of black currant remains on the palate, while the tongue comes out quite clean and dry.
Well structured beer with a body to the height (light, but not watered down), which gives a pleasant, refreshing and decidedly satisfying drink.
Splendid balance (explosion of black currant - slightly astringent note: acid, but not intrusive - final with notes of wood, to round off both the taste of the wild fruit and the sour "wild" note) in which all the elements make their contribution in a recognizable way.

330 ml bottle, Cardinal Pub & Bar, Stavanger. ABV is 6.3%. Hazy deep red to purple colour, small pink head. Intense aroma of blackcurrants and oak, hints of yoghurt. Intensely sour flavour of lemons and blackcurrants, hints of oak. Not a beer for me.

Pours a dark purple with thick, fluffy pink head.
Smell is tart with a big hit of black currants followed by notes of lime, oak, red currant jelly and a hint of vanilla.
Taste is properly sour with nice acidity. Notes of currants, lime, oak and hints of spritzy youghurt, wheat and bourbon vanilla. Dry and vinous, with great complexity.
Mouthfeel is medium, dry and well carbonated.
Overall, a terrific sour, complex and deep.

This beer will make the back of your jaw ache just by smelling it. First few sips are eye-wateringly sour, but eventually your palate adjusts, and the jammy, berry sweetness emerges. Finish is reminiscent of unripe berries. Great stuff.
