To celebrate the 25th Anniversary of Cook's Illustrated we got together with their team for a cross-industry collaboration. Illustrated IPA celebrates our shared focus on process and technique, while recognizing the distinct impact that the magazine had on Trillium co-founders JC and Esther Tetreault along their culinary and homebrewing journey.
This recipe showcases ingredients from both coasts - an array of malts from Hadley, MA's Valley Malt and singularly features El Dorado hops from Washington State. The beer pours a deep and hazy shade of yellow with a tight white head. Aromas of stone fruit and citrus lead off, with an underlying tropical note that increasingly reveals itself as you enjoy the beer. Layers of fruity sweetness hit on the palate with a note of balancing bitterness and floral spice from the Valley Malt Danko rye. Medium bodied and refreshing, with a pleasant drinkability.
MALT: Valley Pilsner, Wheat, Spelt, Danko Rye, Raw Wheat
HOPS: El Dorado.

Had this on 2019-10-20 near Pittsburgh, PA from a 16oz canned on 2019-09-24
A - Hazy straw-gold with a 1-finger head and light lace
S - Vidalia onion, peach and pineapple, light pine, grassy and floral spice
T - Fairly citrus-forward, followed with a good bit of pine, fresh hop bud, light pepper and more welcome bitterness than I expected from the aroma and appearance. Dry, piney and floral finish. Quite nice.
M - Light-medium body and medium-high carbonation. Not a soft feel. It's got some sparkly bunch.
O - West Coast leaning for sure, which is in my wheelhouse. Although it looks like a NEIPA, it doesn't taste like one. I like it.

Picked-up a four-pack of cans at the Trillium Brewery in Canton for about seventeen dollars. Have had a few brews from these guys before. Not a big fan of this brew, super dank & grassy.

Cloudy, naturally. Gold to amber color. Modest starting head. A good ring of lace initially, very little lace afterwards.
There's plenty of berry and tropical (citrus) fruit aromas. It does not come across as very bitter.
Plenty of flavor changes throughout the tasting profile. The aroma notes start the process. There's soon an blood orange rind presence followed by some white pepper spice. The swallow draws out some alcohol warmth and a bit of bitterness. Neutral body with a slightly elevated carbonation level. Overall, a superior New England IPA.

This one pours a thick and hazy looking orange color, with a small head, and lots of lacing.
This smells like sweet fruit and honey, with rye spice, stone fruit, grapefruit, and tropical fruits.
This is classic dank Trillium, with a killer blast of juiciness, creamy and tropical, with a nice dry rye thing on the finish. It’s not super different than most Trillium IPAs, but even with that, it’s still delicious.
This is creamy and rich, with a good level of carbonation and high level of drinkability.
This is pretty great- it’s that classic Trillium treat.
