Continuing our exploration on the base of our bold American Imperial Stout infused with cold-brew coffee, we are proud to present Cacao PM Dawn. We took our base recipe then slightly dialed back the ratio of cold brew Italian Roast from Barrington Coffee to allow the heavy dose of cacao nibs to balance the beer and perfectly accentuate its flavor profile.
Cacao PM Dawn presents an opaque black color with khaki head and lacing. Warm aromas of freshly brewed dark coffee meld with the rich, savory accents of cacao on the nose. The flavor profile leads with toasted graham cracker, nutmeg, dried fruit, roasted mixed nuts, and chewy marshmallow. On the back end, the cacao nibs provide rounded depth of flavor, extending the palate with highlights of earthy, unsweetened dark chocolate. As with all of our PM Dawn variants, Cacao PM Dawn offers a medium to heavy body with a luscious mouthfeel and a light bitterness for a balanced and smooth finish.

Big and rich. Not like that shitty band.
Black with small head that dissipates like every trillium beer.

Glassy, near pitch black appearance. Medium bodied for the style. The liquid poured with absolutely no head nor any lacing. Pretty atypical for the PM Dawn series.
The aroma was also rather odd for these beers. There was a strange smoky quality that reminded me of stale cigarette smoke. Roasted malts were noticeable. Some creamed coffee too. Touch of caramel sweetness. Hint of chocolate syrup. As the beer sat, the sweetness came forth and the smoky notes became more subdued.
Like the nose, the cacao was barely detectable in the flavor profile. Big roasted malt presence on the front end. Darker roast coffee appeared in the center. Bit of vanilla and milky lactose notes too. Some dark chocolate was noticeable in the center but much less than I anticipated. More roast on the back end and in the finish. A bit of char lingered after the swallow.
The mouthfeel was medium bodied for the style. A larger bubbled, fairly aggressive effervescence lent the beer a nice fluffy frothiness. As the beer sat, the carbonation settled down and the liquid turned smoother and creamier. By the drink’s end, the beer left a slightly sticky film on my lips.
Original PM Dawn is one of my favorite Trillium beers of all time, and the peanut butter and vanilla variants were as good if not better. This cacao-infused interation however left a lot to be desired. Not only was the chocolate barely noticeable, but it also seemed to negatively effect the qualities of the base beer.
