This release takes our imperial stout with cold brewed coffee, Night & Day, and pushes the flavor profile to the limit through the use of adjuncts. Madagascar vanilla, cacao nibs from Goodnow Farms and three types of pepper are the features of this recipe, and each accentuates the base beer in their own way.
Out of the bottle it pours dark black with a bit of haze. Warming aromas of coffee, brown sugar and spice waft up from the glass. On the palate we find roasty notes of cocoa and mellow vanilla sweetness. The spice from the chilis is fairly intense, but deeply complex and savory. This medium bodied beer is both invigorating and comforting, with layers of flavor to indulge in.
MALT: American 2-row Barley, C-60, C-120, Black (Patent), Dextrine, Caramunich, Roasted Barley, Special B, Pale Chocolate
HOPS: Columbus

WAY too much heat. I like a good heat beer, like Mexican Cake, Huna. This one was pretty much undrinkable.

That is hot, really hope some age would smooth it out, but chili is hot and overpowers the beer and just does not have the base to back it up. I have been on search for chili beer this winter and this by far at the bottom.

Appearance: Pours fudge brown with a film that fades , leaving a few lilly pads of foam; spotty lacing
Smell: Chocolate, coffee, vanilla and chili tones waft
Taste: Chocolate and chili pepper forward, with the coffee emerging; a hint of vanilla ekes through, the heat builds, in the middle; and in the finish; both the heat and the chili pepper flavors are discernible; the vanilla lingers in the aftertaste
Mouthfeel: Full bodied with low carbonation; warmth in the gullet
Overall: The carbonation was poor on this beer but the flavor profile was good

Pours pitch black. 1 finger deep brown head. The retention is so so, but to be expected for the ABV. The foam does cling to the sides of the glass a bit.
The nose is coffee, but with a twist. The chili and vanilla make the coffee aroma a bit more complex. I don't get much of the cocoa.
Taste - The coffee is up front, and the vanilla and cocoa mixes in with it. That all combines, on the backside, with a pleasing, warming pepper heat. The heat isn't much (mind you, I am a chili head), but it's quite pleasing, and adds to the flavor profile.
The body is decent, about what I'd expect. The chilies provide a nice, and pleasing, burn in my throat.
Ok, if you're not a fan of heat, then you might want to skip this beer. I am a fan, and the peppers, vanilla and cocoa kick this beer up a level. It is quite good, and another great beer from Trillium.
