For this take on our imperial stout with cold brewed coffee, Night & Day, we added toasted almonds and Madagascar Vanilla Beans to bring out and showcase the roasted and nutty nuances of the base beer.
Out of the bottle, this beer pours a deep jet black color with slight haze. Aromas of Moka pot brewed espresso swirl to the nose underpinned by savory notes of dried fig and date. Crunchy almond biscotti lead on the palate with joined by highlights of shaved dark chocolate, vanilla torrone, and robust but smooth ristretto. Medium bodied with a balanced finish, Almond/Vanilla Night & Day unfolds layers of comforting and warming flavors to indulge in.

Pours pitch black with minimal brown head. What's there dissipates quickly. It is a thick pouring beer.
The nose - oh, my. Rich deep coffee mixed in with vanilla. Just a hint of the almond.
Taste - mellow up front the flavors kick in on the backside. The coffee, vanilla, and almond.
Thick body. Smooth. It really doesn't drinking like an almost 13% beer - no burn at all.
Holy cow. Damn good stout.

This one pours a a dark black color, with a small head, and a little bit of lacing.
This smells like roasty and caramelly coffee, bitter almonds, creamy vanilla, and lots of chocolate.
This is pretty decadent, as expected. The almonds actually add some bitterness to a sweet base of caramel, chocolate, and coffee flavors. It's also a touch boozy in a warming way.
This is medium bodied, and pretty creamy, with a little bit of booziness on the back end.

Served in a tulip
The beer poured a medium viscosity dark brown color and appeared slick, oily and nearly pitch black in the glass. A thin, frothy, saddle brown crown topped the liquid, but it quickly fell to hairline collar. Tiny droplets of lacing trickled down the glass.
Coffee notes dominated in the aroma. Bold, medium roast coffee to be precise. Some brown sugar sweetness was also apparent. Roasted malts came through as well. Hint of vanilla. As the the beer sat, a subtle wet paper note appeared. The beer smelled like it was slightly oxidized. Toward the drink’s end, the oxidation disappeared and the coffee again took over.
The flavor profile followed the nose. Big coffee presence. Cold, sweetened coffee came to mind. Touch of vanilla and lactose-like milkiness. Brown sugar was again noticeable. Roasted malts appeared next and intensified as the beer moved along the palate. The finish contained more roast and a fairly strong boozy kick. A steely, metallic-like note was apparent initially but, like the oxidative quality in the nose, it soon disappeared.
Solid mouthfeel. Medium-full bodied for the style. Creamy and soft on the palate. The liquid contained a fine, subtle effervescence.
Although the almond was undetectable and the vanilla played a rather small role, this Night & Day variant was enjoyable nevertheless. As long as one approaches this beer with the expectation that is it quite similar to original Night & Day, it is unlikely to disappoint.
