Lock & Key is a series of gluten-reduced beers designed to expand our portfolio for more beer lovers to enjoy. In chemistry, Lock and Key Theory describes an enzyme and substrate relationship in which only the perfectly fitting substrate will engage a specific action of the enzyme. In the case of our beers, the enzyme breaks down the gluten protein substrate over the course of fermentation. Unlocking this process allows us to create our delicious, gluten-reduced offerings.
Our second release in this series, this Simcoe, Galaxy, and Citra dry hopped IPA bursts with aromas of pulpy orange juice, fresh mango, and ripe pineapple. Hop forward flavors of honeydew melon and white grapefruit wash over the palate underpinned by a faint orange blossom honey sweetness. Medium bodied, this batch of Lock & Key has a gentle pithy bitterness and a clean finish.

Typical TBC tall can...1/25/19 stamped on the bottom
Also a typical looking TBC, NEIPA pour, clouded up and leaves some super fine froth and lacing.
Luscious fruited up nose, with ripe pineapple, a hint of smoke and mango coming forward.
Tasty fruited up and tropical brew...more of the sniff on the palate, perhaps a bit lighter bodywise then the typical Trillium brew (Perhaps the "Gluten-- reduced" element?)...anyway more ripe pineapple is always a good thing...way better then decent, but not my favorite Tril. offering

Pours murky orangy-gold with a minimal head, retention, or lacing. Peach, orange, and grapefruit in the nose. Medium bodied with a chalky, textured mouthfeel. Ripe tropicals on the palate with zero malt and very dry. Pineapple, peach, mango, and orange. Finishes dry with a somewhat coarse bitterness and lingering citrus.

Pours hazy, orange gold in color with 1/4 inch head. Taste is orange juice, lime and cracker. Medium bodied, dry, slightly bitter, with moderate carbonation. Dry like a brut ipa. Not bad, but there are several other Trillium ipas I prefer. Glad I did not spring for a full four pack.

Pours amber gold orange with a dense creamy off-white foam head. Crisp citrus, tropical fruit and berry notes lead the way over a bready malty grist with some floral earthy herbal dankness. Notes of freshly juiced orange, mango, pineapple, melons, honeydew, grapefruit, dark berry, mild honey sweetness, with some floral earthy herbal piney dankness. Medium bodied, creamy and smooth with moderate carbonation. The hop aromas are really bright in this, and it still isn't too dry or short of any flavors. Overall a really nice gluten-reduced IPA.
