Collaboration with J. Wakefield Brewing
After a long year spent in Bourbon oak barrels, we are proud to present Barrel-Aged Tiramisu. The base imperial stout for this J. Wakefield collaboration was brewed with Brown Sugar, Lactose and over five hundred pounds of Lady Fingers from A&J King Artisan Bakers based in Salem, Massachusetts. Like it’s original iteration, we conditioned this beer on Madagascar Bourbon Vanilla Beans, Mostra Coffee, and our Trillium blend Cold Brew Coffee
Pitch black in appearance with subtle ruby highlights and a khaki head, Barrel-Aged Tiramisu swirls decadent aromas of melted dark chocolate chips and freshly ground dark coffee with bold accents of toasted oak and rich vanilla. Following the nose, flavors of cocoa powder, subtly sweet dried fruits, dark caramel, and baking spices build in intensity on the palate tied together with warming notes of bourbon and ristretto. With a thick and viscous mouthfeel, Barrel-Aged Tiramisu makes for a long, smooth and satisfying sip.

Poured into a tulip glass via bottle
color is a chocolate brown, with mahogany colored foam
smell is bourbon up front, followed by some molasses, brown sugar, dark fruit, baker's chocolate and faint coffee
Taste is sweet caramel and bourbon off the bat, some charred oak and vanilla follow with that faint coffee bringing up the rear
carbonation is very low
mouthfeel is full and creamy/buttery
sweet but not as pastry sweet as some other Trillium stout
very nice!

Pours an inky black with a loose, quarter-inch, mocha-colored head that dissipates into a tight band. Nose is a bit sharp and somewhat unanticipated - dark malts and green bell peppers. Taste reveals milk chocolate, notes of coffee, marshmallow and a kiss of green peppers at the finish. Mouthfeel is light-medium in body with a carbonation shy of assertive. Overall, interesting; however, not sure that long-term aging is recommended for this beer.

Inky pitch black appearance. Super slick, oily and viscous in the glass. A thin, bubbly, saddle brown cap topped the liquid but it quickly dissolved. No lacing or head retention whatsoever.
Coffee dominated in the aroma. Rich, robust, darker roast coffee. Loads of vanilla. Subtle brown sugar notes were apparent as well. Nice amount of sweetness. There was a really interesting herbal-like booziness too. An Italian amaro came to mind. As the beer sat, the coffee presence decreased and the herbal notes intensified.
The flavor profile was huge. Loads of roasted malts on the front end. Strong vanilla notes too. Moderately sweet. Espresso came through big time in the center. Some brown sugar as well. More roastiness on the back end. The beer finished with big, boozy bourbon notes and some lingering, oaky barrel character.
Fantastic full bodied mouthfeel. Creamy, frothy and smooth on the palate. The liquid contained a fine, zippy effervescence that fluffed up nicely. After a few sips, the beer left a super sticky film on my lips.
Barrel-Aged Tiramisu is a terrific pastry stout, but I still prefer the non-barrel aged version over it. The bourbon notes and the barrel aging seemed to mellow the adjuncts and subdue the overall sweetness. This is almost an entirely different beast from the original.

This is a pretty amazing beer but really one note - the overall impression I got from it was drinking bourbon first, then beer. I usually love the barrel taste but in this case it was a little too overwhelming and I couldn't really taste the adjuncts as much as I would have liked. I'm not dinging it for taste as much as I didn't not enjoy it (just to superimpose the dreaded double negative, yet one with a perfect purpose...); the bourbon taste was still awesome, just a little too dominant for me. Otherwise, it had all the other components of a great BA stout.

Very dark brown appearance with a nice light brown head that dissipates quickly. Aroma is a slightly sweet vanilla, coffee and chocolate blend. Taste is a very pleasant blend of bourbon, vanilla, coffee and chocolate.

T -- Vanilla cake, earthen oakiness, milk chocolate, cold brew coffee, mild bourbon. The barrel aging cuts through the sweetness of the base beer just the right amount
F -- Thick, viscous, creamy mouthfeel. Minimal silky carb.
O -- Just missed out on the bottle release of this one, but managed to snag on draft at Fort Point. It's good but not Earth shattering, so don't worry if you miss out on this one
