For our newest hoppy Permutation recipe we continued to expand our repertoire by creating a single malt and single hop (S.M.A.S.H) recipe. While our Street and Island series put individual hops on display, paring the recipe down even further allows us to experience the breadth of flavor that each ingredient brings more fully. We hope you'll enjoy the finished product of this approach as much as we do.

With a grist comprised entirely of Pilsner malt and utilizing Australian grown Galaxy for all whirlpool and dry hop additions, Permutation #88 provides a clear and uncomplicated showcase for the two ingredients. Out of the can, this beer pours a heavily hazy straw yellow color. As a fluffy white head builds in the glass, the nose is greeted by Galaxy’s distinctive passion fruit and citrus-intensive aromas with undertones of tropical mango, light concord grape and freshly cut grass. The pilsner malt backbone provides a gently sweet, crackery base that allows for a powerful wave of Meyer lemon, juicy clementine and stone fruit to shine on the palate. Medium bodied, Permutation #88 has a rounded bitterness and clean, mouthwatering finish.

Appropriately pulpy and opaque yellow body for Trillium. Head production is humble, with similarly mediocre retention.

Galaxy hops are clearly showcased on the nose, with bright tones that favor herbs (mint, oregano, pepper, basil), citrus (lemon, orange, grapefruit), and tropical fruit (mango, papaya, strawberry), in that order.

Tons of citrus on the palate, in particular grapefruit and orange. Laced throughout with bright herbs (oregano and mint), and accented with hints of melon, mango, and papaya. Just a hint of vanilla and pungent earthiness from the malt, but the pilsner malt is overwhelmed by the Galaxy hops.

Incredibly lively up front, with a ton of sting, but it quickly settles into the smooth creaminess for which Trillium is well known. Shows the high ABV cleanly, not hiding it, not flaunting it.

16 oz. can dated 3/12/19. Poured into Aslin anniversary glass.

2F head, poor retention, not much lacing or cap and ring. Beer is a hazy slightly pale orange juice color. Definite notes of peach and berry from the Galaxy hopping, as well as a grassy, earthy nose and taste. The Pilsner malt definitely is an interesting choice for this DIPA and adds more body than normal and some sweetness, providing a more or less neutral finish. Beer is medium-bodied and lightly-carbonated, quite drinkable with nice, rounded flavors and good balance.

From a 16oz can, dated 03/12/19. Served in a Trillium-branded tulip... because proper glassware.

Pours thick and murky like a glass of grapefruit juice. A scant quarter-finger of fizzy head with zip for retention or lacing, just a feeble little, fizzy collar.

A low-intensity nose of tart citrus and lacquer thinner.

Taste follows the nose, mildly sweet and composty tropical fruits, mostly citric, bitter grapefruit and lemon, tart lime, but with strong overtones of paint thinner going into the finish and far beyond.

Feel is decent enough, certainly not as dense as it looks in the glass. Medium-plus bodied and brightly carbonated.

Overall, I can’t help thinking that this was a waste of good Galaxy hops that somebody else could have made better use of.

Completely opaque, pale straw yellow appearance. Of all the turbid looking Trillium beers, this was one of the most extreme. A small bubbly cap of bright white froth rose above the body, but it quickly dropped to a thin ringlet. No lacing whatsoever.

The aroma was much more subtle than I anticipated. Faint citrus notes were detectable. I might guess orange juice. Touch of sweetness too but not much else. As the beer sat, the orange presence intensified. Some tangerine-like tanginess appeared as well. Hint of white grape.

Citrus notes dominated in the flavor profile. Loads of juicy orange and clementine. Nice light Pilsner malt backdrop. Some lemony tartness appeared mid palate. Orange rind came through on the back end and intensified in the finish. Hint of white grapefruit. Tangy clementine notes and some rind-like bitterness lingered after the swallow.

The mouthfeel was solid. Frothy and slightly shy of medium bodied for the style. The liquid contained a larger bubbled, moderate effervescence that turned creamy, slick and smooth on the palate.

Although this beer looked pretty intense, its flavor, aroma and mouthfeel were all surprisingly subtle. Permutation Series Number Eighty-Eight is an enjoyable and highly quaffable double IPA, but I probably would not go to any lengths to procure it again.
