A collection of our most fruit forward beers to date, Super Duper Soak's are the next step in our series of Sour Wheat Ales. Focusing on single fruit profiles and pushing passed the fruiting rate of our Super Soak's, these beers offer limitless depth. Less sour than our other Soak’s, their amped up malt bill serves to moderate lactic acid formation allowing the extra dose of fruit to take center stage.
Like our other Soaks, we ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we re-ferment fruit in the base beer after primary foeder fermentation to “soak” for a deep extraction of unique colors, aromatics, and flavors.
The second entry into this exciting new series, blueberries lend this beer a regal dark purple color and create succulent aromas of blueberry cobbler, tart raspberry compote, and fresh blackberry preserves. The fruitiness of the nose is braced by undertones of wet oak along with a touch of barnyard and earthy funk. A bold palate matches the nose with rounded, deep, and mildly sweet berry flavors. Medium bodied with a fully restrained sourness and refreshing carbonation, Blueberry Super Duper Soak has a mouthwatering finish that beckons you back for another sip.

From an 11.2 oz. bottle into a Trillium Willi Becher style glass, this beer pours out like plums or pomegranate. It’s a burgundy and forms almost two fingers of pink rose petal colored crown.
The nose brings definite fruit; soft and smooth. Natural blueberries along with a slight tartness and maybe even blackberries.
Before I even get to the taste, I’m shocked on the first sip by the amount of tartness and acidity this has to it. The nose was very misleading in that aspect and draws you in for the big punch. Tart, slightly acidic, dry and has a high carbonation that leaves air in your chest and throat.
The taste does bring blueberry, and once again even blackberry. It’s all backed by a lingering vinegar.
Overall, it’s a very solid brew. But being picky, I would wish for more blueberry to shine over the vinegar.

Beautiful appearance. The translucent, dark violet colored body was topped by a near two-finger tall, larger bubbled, light magenta crown that quickly fizzled away. A thin collar encircled the liquid. Dots of lacing stuck along the glass.
The aroma was crisp and sour but fairly nondescript. I might guess that this contained some type of berries but definitely not blueberries specifically per se. Red wine also came to mind. Hint of dry yeastiness. As the beer warmed, the berry notes became slightly more prominent.
The flavor was even less distinct than the nose. Quite sour with loads of acetic acid. Underripe berries were detectable on the front end. Perhaps some oaky red wine too. Tart lemon notes appeared in the center. More berries and dry oaky barrel on the back end and the finish. Some lemony tartness lingered after the swallow.
The mouthfeel was super light initially and contained an aggressive, larger bubbled effervescence. This seemed somewhat “airy” and perhaps over carbonated. As the beer sat, the carbonation settled to an appropriately lively level and turned creamy, frothy and smooth on the palate.
Lately, Trillium’s fruited wild ales seem to demonstrate more balance and actual fruit flavor (especially the beers in their Super Duper Soak series), but this one was a return to the past. Super sour and acidic with little fruitiness whatsoever, Blueberry Super Duper Soak was definitely a “one and done” for me.

Poured from an 11.2 oz bottle into a tulip glass. First time trying a beer from the super duper soak series. Deep, almost opaque purple color. Thin off-white head that quickly dissipated with no lacing. Hints of tart blueberry and funk on the nose. Blueberry compote/jam flavors with a prominent barnyard funk and subtle oak. Light but uniform feel of carbonation on the palate. A bit more sour than I was expecting but I think I like this one better than the double/triple seesaw series, because of the earthy wild ale funk. Will definitely pick up another bottle of this one sometime.

Pours dark purple with a pink head. Minimal retention or lacing. Lactic acid with light blueberry in the nose with hints of diaper and crushed aspirin. Medium bodied with a crisp, sharp mouthfeel. Soured blueberries on the palate with jowel-watering acid. Finishes with long-lingering lactic acid and fading blueberry.
Was hoping for more blueberry and less acidity.
