Collaboration with The Veil Brewing Co.
After a long year spent in rum oak barrels, we are proud to present Barrel-Aged Macaroon. The base imperial stout for this collaboration with The Veil was brewed with brown sugar and was conditioned on coconut after barrel aging.
Out of the bottle Barrel-Aged Macaroon pours pitch black in appearance with subtle ruby highlights and a dark khaki head. Bringing the glass to the nose, bold aromatics of molasses, dark chocolate bars, caramel candies and bright coconut meld with a luxurious barrel character of wet oak and rum. The palate opens with flavors chocolate covered raisins, rum cake, and cold brew coffee leading to luscious notes of sweet coconut macaroons, Mounds bars, hazelnut paste and vanilla bean. Medium-to-full bodied with a viscous mouthfeel and decadent sweetness, Barrel-Aged Macaroon has a long, smooth, and warming, yet not overpowering finish the beckons you back for more.
MALT: Maris Otter, C80, C120, Munich II, Simpson DRC, Chocolate Malt, Midnight Wheat, Flaked Oats.
HOPS: Hop Extract

Poured into a teku glass via bottle dated 4/24/2019
color is smooth jet black with rusty brown foam
smell is sweet rum, brown sugar, vanilla and coconut up front, some dark fruit as well
taste is the rum barrel up front mixed in with the sweetness from the brown sugar and vanilla
carbonation is low
mouthfeel is full
this is pretty damn sweet and the flavors shine nicely here

The beer poured an insanely thick and viscous, absolute pitch black. A barely-there, saddle brown film of bubbles topped the liquid, but it dissolved almost instantaneously. The body looked super shimmery and oily in the glass and could have been mistaken for being flat.
The nose was outstanding. Toasted coconut notes dominated. This beer definitely lived up to its name. Malty and sweet. Nice melding of caramel and roasted malts. Caramel candies also came to mind. Loads of brown sugar too. Vanilla was also noticeable. Somewhat rummy as well. Hint of chocolate syrup.
The flavor profile was nearly identical to the aroma. Uber malty and robust. Caramel and roasted malts came through big time. Huge toasted coconut presence. Loads of sweet rum too. Boozy but not excessively so, especially given the insanely high ABV. Fresh vanilla bean appeared in the center. Some caramel candy notes as well. More sweet rum, roast and lingering booze on the back end and the finish.
Uber rich, thick, viscous mouthfeel. Completely full bodied for the style. The liquid contained a subtle, finely beaded effervescence that turned pillowy soft and insanely plush on the palate.
Trillium have released some big pastry stouts in the past, but this might just be their most intense to date. The toasted coconut/macaroon notes were front and center in both the aroma and the flavor, and the body was huge. I can see some folks being put off by the overt sweetness, but I really enjoyed it.

Nice dark stout. Pours with minimal lacing. Nose is strong rum barrel and brown sugad.- mild coconut. Taste follows good barrel flavour and the. Just cloyingly sweet. A lot of brown sugar and very little coconut. Feel is thick, ever for the type of stout. Overall, disappointed. It does not need this much brown sugar. I would take bourbon paradise any day over this.

Starting out with a savory toasted element like an Asian pastry, this is actually quite thick and really nice, particularly compared to other Trillium pastry stouts. The toasted element melds well with a cherry character that is kind of like it's baked into biscuit, melding into decadent chocolate that's not too sweet. I mean it certainly is like a macaroon with toasted coconut, like a kind of shortbread cookie with a mild brandy heat on the back end. I'm surprised it doesn't take over and instead seems to work well with it, as brandy can usually screw up a stout pretty badly. Really enjoyable.

Pours an inky black with no head. Nose expresses dark chocolate and spice. Taste expresses chocolate, coconut, molasses and brown sugar. Rum barrel presence is far in the background. Mouthfeel is light-medium in body, somewhat thin for the style, with a still carbonation. Overall, a pretty amazing pastry stout.
