Our Fated Farmer Series is a landmark step toward realizing our foundational vision for Trillium: Build a place that intuitively celebrates the intersection of New England farming, agriculture, brewing and an integrated community experience. The grist of each of the dynamic Fated Farmer wild ales is set on the structure of Valley Malt and is barrel fermented in 500L puncheons with our Native New England Mixed Culture and aged for 5-7 months, before re-fermenting on freshly harvested fruit. The beers in this series are explorations of how natural agriculture can enhance and accentuate our wild ales - as we continue to produce new batches of Fated Farmer we hope to give a recurring showcase to this concept.
The addition of locally grown pinot noir grapes lend this rendition of Fated Farmer a deep ruby red hue with a slight haze. Out of the bottle Fated Farmer: Pinot Noir greets to nose with lush aromas of red fruit, delicate spice notes and a touch of earthy funk. The palate bursts with mildly sweet flavors of crushed concord grapes and ripe raspberries graced by a gentle oak character. Light to medium bodied, Fated Farmer: Pinot Noir has a crisp, effervescent carbonation with a refined level of acidity highlighted by a soft tannin finish.
MALT: Valley Wheat, Valley Pilsner
HOPS: Aged Hops

Poured from a 330 mL bottle into a tulip glass. Deep ruby red color with lively effervescence and quickly receding head. No residual lacing or head at all. Strong scents of grape must and kombucha. Refreshing flavors of tart grape and earthy funk, a very slight vinegary-lactic acid undertone on the finish. Some mild lingering grape must flavors on the palate. A really refreshing wild ale- the Pinot noir grapes really work well here.

330ml bottle dated 11-APR-19. Excited to drink this because Pinot Noir is my favorite wine grape. Pours a beautiful purple-red color with a proper head. Nose is fantastic, full of funk, tart fruit, and yeasty barn/hay/earth. Taste is much heavier on the fruit, obviously the tart and sugary flavor from the grapes. Feel/body is perfectly effervescent and acidic. Wonderful wild ale!

Pours hazy scarlet orange red with a dense creamy white foam head. Smells real complex, wild and lambicy, slightly vinous with fresh Pinot Noir red wine grapes, tart red fruit notes, lemony citrus, toasty hay, straw, wheaty grainy malts, leathery barnyard funk, oak barrel, wildflowers, tea, and dusty herbal earthy aged hops. Tastes really tart and acidic with fruity light red wine notes, Pinot Noir black grapes, tart red fruit, sour lemony citrus, toasty hay, straw, wheaty grainy doughy biscuity malts, woody oak barrel, leathery barnyard funk, wildflowers, tea, and dusty herbal earthy aged hops. Feels medium bodied, creamy and crisp with smooth moderate carbonation and moderately high acidity. Overall a really nice and interesting barrel fermented wild ale with Pinot Noir grapes.
