Inspired by the grace and elegance of this distinctive and ubiquitous wildflower lily, Dogtooth Violet follows in the footsteps of Permutation #63: a simple American Wild Ale that balances a firm grassy bitterness with a touch of funk from aged hops and our Native New England Mixed Culture. Pouring a light straw with a fluffy head, aromas of fresh lemon, biscuit, and dried green tea leap from the glass. Floral accents of vibrant lemongrass, dandelion, and lavender enliven the palate with a slightly sweet biscuit note following. Medium bodied with a rounded bitterness, a crisp bubbly effervescence and a light acidity, Dogtooth Violet is approachable with a clean and refreshing finish.

This beer is moderate funk, minimal sourness but a dry and Bretty overall flavor. At 6.2% ABV it’s a good sweet spot. If you like Orval you’ll like this brew.

330 ml bottle poured into a chalice.

Pours a hazy yellow gold color with a huge fluffy white head. Excellent retention with some modest lacing. Settles into a fat blanket of foam.

The aroma is subtly grainy, grassy and funky up front, followed by some green apples, apricot, lemon zest, and fresh pear. There's also notes of lavender tea, sweet dough, and a bouquet of floral scents. Complex and weird.

The flavor is fruity upfront, like Richard Simmons. Lots of lemon, pear, apricot, and peaches followed by some honey, biscuit, and barnyard funk. Finishes with some lavender, grass, and clove.

The feel is medium light bodied with good carbonation. Crisp and lightly dry. Very clean.

Overall, this is a great wild ale. It's complex yet approachable and surprisingly drinkable. For the price, this one is hard to beat.

Pale gold, straw-colored pour, well-carbonated. There is an elegance and delicate nature to this wild, the brew touching upon farmhouse funk as well as gentle apricot and lavender sweetness. Light but yet significant. Subtle charms--a fantastic summer beer.

L -- Slightly hazy golden straw body with two fingers of dense white head produced with gentle pour. Great retention and lacing, this looks very refreshing
S -- Bright floral, dried apricot, white peach, subtle barnyard funk, lemon peel
T -- Wet hay, earth, dried floral, lightly vinous qualities, aspirin, tobacco leaf. Subtle yet complex
F -- Fluffy and easy drinking. Nice natural effervescence
O -- Pretty cool that you can buy this for $10/4-pack from the brewery, and it's been bottle conditioned for almost two years

375ml bottle.

Pours clear yellow with a tall, rocky head of white. Exeptional retention with rings of lacing. Grassy and bretty in the nose. Pineapple skins, wet hay, and apple peels. Light bodied with a crisp mouthfeel. Dry and almost minerally on the palate with shades of honey-drizzled apple, clove, and cut grass. Finishes bone dry with lingering bretty funk.
