Our Fated Farmer Series is a landmark step toward realizing our foundational vision for Trillium: Build a place that intuitively celebrates the intersection of New England farming, agriculture, brewing and an integrated community experience. The grist of each of the dynamic Fated Farmer wild ales is set on the structure of Valley Malt and is barrel fermented in 500L puncheons with our Native New England Mixed Culture and aged for 5-7 months, before re-fermenting on freshly harvested fruit. The beers in this series are explorations of how natural agriculture can enhance and accentuate our wild ales - as we continue to produce new batches of Fated Farmer we hope to give a recurring showcase to this concept.
Pouring a light straw color out of the bottle with a foamy white head, Fated Farmer: Seyval Blanc has a lively nose offering vibrant aromatics of citrus zest and bright stone fruit with a faint earthy funk. The palate is teeming with notes of young white wine revealing flavors of mandarin orange, tart quince, and white peach. Light to medium bodied, Fated Farmer: Seyval Blanc is effervescent with a refined level of acidity and a crisp, slightly drying finish.

Pale yellow body, mostly transparent, with minimal head fading quickly to nothing. No sign of lacing. Sharp sour nose, barrel and acidity. Flavor is softer, acidity and wine barrel, moderate grape hit, prickly carbonation, tart finish. Solid tart wild beer with wine notes.
