Cutting Tiles is an exploratory series of Double IPA's featuring a range of aromatic single hop varietals brewed with raw wildflower honey. This new version is dosed with 100% Nelson Sauvin in all kettle, whirlpool and two massive dry hop additions. The local wildflower honey keeps the body light and drinkable while providing a floral, earthy backbone.

Pouring a hazy golden straw, Nelson Sauvin Cutting Tiles is intensely aromatic, teeming with sweet tones of tropical fruit, bright citrus, and vanilla. Bold flavors of pulpy grapefruit, lemon-lime zest, and ripe kiwi take the lead on the palate as notes of honeydew melon and table grapes develop and add depth. Medium bodied with a pillowy soft mouthfeel, Nelson Sauvin Cutting Tiles has a gentle, restrained pithy bite.

Poured from a can to a tulip snifter. Can date was less than two months old.
Nice two finger head , excellent lacing. Aroma was excellent.
This is the second beer that I’ve had from this brewery. Both seem to have had flavors that gradually creep up on you.
Both have started out rather tame, with an oatiness to them. Then the layers of flavor seem to keep building.
Good smoothness, then the stone fruit flavors gradually come forth.
Very good beer!

Slightly more than a fingers worth of lopsided white froth with some light khaki undertones... Solid retention ultimately gives way to a mostly full lacing and slight collar... Color is a moderately hazed peach... A bit of hops on the nose to start, but that is followed by a swelling sweet honey presence... Hops are more pronounced on the palate and take on a very earthy character... The honey sweetness is missing in action... A sturdy cracker malt base arises on the finish... Feel is medium to full bodied... Lush and slightly chewy with just a smidge of carbonation... Interesting beer that doesn't quite taste like anything else which is always much appreciated...

Can poured into a Mountain Rambler Brewery pint glass

A: Pours hazy golden amber with a frothy cream white head that settles to a firm layer and laces nicely.

S: Rich juicy exotic, tropical, and stone fruit, ripe citrus, floral notes, a touch of spicy pine, light earthy undertones, faint Southern Hem diesel, biscuity malt, and caramel honey sweetness.

T: Big time mix of zesty citrus, with ripe exotic, tropical, and stone fruit, gooseberry, lemon lime, white grape, grapefruit, passion fruit, peach, apricot, pineapple, and papaya, plus hints of kiwi and melon, floral notes, underlying spicy resinous pine, subtle earthy undertones, faint hints of Southern Hem diesel, biscuity malt, and caramel honey sweetness.

M: Just a touch on the fuller side of medium body, slightly prickly moderate carbonation, soft on the palate, a bit creamy.

O: I always love seeing Nelson hops being allowed to really shine, so I'm all about this one. There's so much depth of flavor that comes out, nicely accented by Columbus, and laid out over a super smooth malt backbone; not to mention the little extra something special that the wildflower honey brings. This is the 2nd beer in this series that I've been able to try, definitely gonna keep snapping them up when I can.

Dated 01/07/25, into a wide wine glass.

Pours a rich pale yellow with ample foam. Super hazy. Aroma is white wine funk with a lot of signature Trillium dankness and surprising bitter grapefruit. Some pulpy tropical fruit as well. Flavor is very interesting. Heavy on the Nelson, of course, which expresses as potent white grape and papaya, but there's an extremely fresh vegetal note present that's really impressive. The honey comes through without adding any sweetness, and there's a really interesting malt note appearing on the finish. It wraps up dry, but not bitter. No residual sweetness but barely bitter except on the very long end. The honey is interesting and I think it adds a lot here. The mouthfeel is nice and smooth, but the body is extremely light and it's dangerously drinkable.

Between the incredible drinkability, potent and complex hop flavors, and excellent balance, this beer was worth the stupid price I paid for it. Trillium did some magic here, and I was lucky to find this can as fresh as it was, since it's so hard to find their beers even months old. I will continue to hunt and will NOT be sharing the place I found this and many other fresh cans.

Pours am milky light orange with a 1F head and heavy lacing.

Smells of resiny hops and citrus.

Tastes of dank resiny hops, grapefruit, tangy wheat, orange, cantaloup and white grapes with a lightly bitter, alcohol warm finish.

Medium body with light carbonation. Smooth mouthfeel.

This brew is a tour de force of nuanced tastes. Lightly bitter overall with the honey shining through.
