Collaboration with Evil Twin Brewing

We teamed up with Evil Twin Brewing and our great friend Jeppe Jarnit-Bjergsø to brew our latest dessert-inspired imperial stout: Danish Guy. Extending on our our previous imperial stout collaboration, Dusk Trill Dawn, and inspired by the Danish cinnamon roll, kanelsnegle, we utilized a mash with a bevy of dark roasted malts and dark brown sugar and then conditioned the beer over an extended period with potent Vietnamese Cinnamon, Madagascar Vanilla Beans and Toasted Almonds to maximum its flavor.

The end result pours pitch black with a light brown head. With a swirl of the glass, Danish Guy announces itself with rich aromas of cinnamon-brown sugar, caramel roasted almonds and melted dark chocolate bits that extend right through to the palate. Immediately calling to mind flavors of freshly baked, indulgent cinnamon rolls the palate shows ample depth with layers of vanilla glaze, subtle dark fruits and molasses. Medium bodied with a velvety mouthfeel, Danish Guy offers a mild flourish of cinnamon spice towards the back end for a smooth and decadent finish.

Very dark appearance with slight tan head that dissipates quickly. Aroma is a very pleasant blend of almond, vanilla and cinnamon. Taste is also a nice blend of almond cinnamon and vanilla.

Dark brown/black appearance. Perhaps a touch thinner than I anticipated for a beer of this magnitude. The oily looking body was topped by a creamy, half-inch tall, khaki colored crown that quickly fell to a lasting collar. A few dots of lacing trickled down the glass.

The aroma contained all the elements of a Danish pastry but was slightly more subtle than expected. Cinnamon came through strongest. Vanilla notes were also apparent. Roasted malts were quite noticeable as well. There was a faint almond-like quality too. Moderately sweet with a nice brown sugar presence. Hint of metallic character and/or oxidation initially but this disappeared with time.

The flavor profile was similar to the nose but slightly less punchy. Cinnamon again was quite apparent. Good dose of vanilla too. The beer was anchored by a stiff roasted malt backbone. Brown sugar came through in the center. Bit of almond as well. Nice balance of roasty and sweet. Boozy notes appeared on the back end and carried into the finish. For 14.3% ABV, however, the alcohol was surprisingly subdued.

Nice creamy, frothy, smooth mouthfeel. Medium bodied for the style but thinner for a beer this boozy. The liquid contained a finely beaded, fairly zippy effervescence that fluffed up nicely on the palate.

Although Danish Guy was a really enjoyable pastry stout, it lacked a bit of intensity. Hopefully when they brew a barrel-aged version of this, everything gets kicked up a few notches.

on tap at canton...huge cinnamon scent...dark brown appearance...taste is overly sweet with flavors all over the place (non-danish like)...there is cinnamon, guy...medium feel. this was difficult to finish a half pour on the patio...warmed this became worse.

L - Black body. Two fingers of light brown head. Head was slightly fizzy like soda.

S - Awesome aroma of brown sugar and cinnamon. Smells like fried dough with cinnamon sugar on top.

T - A little too sweet at times. Strong vanilla extract taste dominates, but the cinnamon and brown sugar are still there. Molasses and dark fruit notes too.

F - Thick and viscous body. Touch of booze, but forgivable at over 14%

O - Amazing nose, but taste could be too sweet at times. I got used to the vanilla sweetness on each sip. Overall really good.
