The Seesaw Series is our gose playground. Designed to capture delight and fun in the form of an easy-drinking and flavorful beer. Each Seesaw has a unique fruit addition to pair with balanced tartness, a touch of salinity, and ABV on the lower side. The nostalgic thrill of warm-weather fun reimagined in one of our favorite styles. The number of Seesaws dictates once, twice, or three times the fruit added.
As New Englanders not ready to give up on Summer, our second island-inspired Seesaw is taking our minds away from foliage and transporting us back to the beach. A triple dose of Pineapple, Coconut, and Key Lime contribute concentrated tropical smoothie notes that are balanced by a welcoming acidity. Layers of toasted coconut, candied pineapple, and freshly zested key lime are amplified by a touch of salinity that leaves us begging for another sip. Break out the umbrella and kick your feet up, summer is officially extended.

As goses go, this was a really nice rendition, but not my favorite. All of the 3 flavors of pineapple, coconut, and lime were there for sure, and the smell was nice and tart and mouth-watering. I drank a couple of these over a few weeks, but they never became a go-to favorite for me. Maybe just too acidic and tangy in a 16-oz portion? I liked some of the other Trillium beers I got at the same time much better, but of course they were different styles as well. It's possible I would have liked this more during the warm summer months...
