We brew Deciduous to welcome the return of Autumn and to celebrate New England's changing foliage. Inspired by the dynamic New England climate, we recalibrate and evolve our recipe annually to produce a new iteration each Fall. When we decided on the recipe for the 2018 vintage, we knew that it was destined for barrel-aging. Dialing back a bit on the Fig addition to allow for Goodnow Farms Cacao Nibs, Madagascar Vanilla Beans, and Piloncillo Cane Sugar to shine, this American Strong Ale rested for a year in Woodford Reserve Double Oak Barrels.

Pouring a deep russet brown with a touch of haze, autumnal aromas waft out from the glass. A bundle of dark fruit notes, from fig and date to raisin and plum invite the first sip. Towards the back of the palate, chocolate, oak, and vanilla add layers of complexity. Thought-provoking and gently warming, we hope you share Barrel-Aged Deciduous 2018 on an evening spent with dear friends.

Bottle from 2018, drank January, 2021.

Really enjoyed this, aged quite well. Didn't get much chocolate or vanilla, but the fig was dominant. Really malty and sweet. Not too much of a looker and definitely had some stuff cloudy particulate matter in the bottom, probably from the extensive aging, but that didn't matter. And no bourbon at all so not sure what that was all about. All kind of ironic in that the fig was dialed back, and the Woodford barrel was specially called out, something Trillium rarely does. Either way, enjoyed drinking this one. Cheers!

nails every characteristic you’d want in a barrel aged strong ale: dark mahogany appearance, dark fruit scent and up front taste, medium feel. there’s an odd metallic aftertaste though. took a while to get through the bottle solo.

Bottle: Poured a dark brown foamy head with brown foamy head. Aroma of caramelized malt notes with some bourbon and oak notes. Taste is a mix of dry caramelized malt notes with some woody bourbon notes and light vanilla notes are also perceptible. Body is about average with good carbonation and light warming alcohol notes. Enjoyable but dryer then expected.

Pours dark reddish brown with a thin tan head. Boozy sweet aroma, raisins, figs, dates, bourbon oak barrel, vanilla, chocolate, fig newtons. Tastes like blackberry pie, plum, dark raisins, fig, sweet bourbon, marshmallowy vanilla, oak barrel, chocolate, dark caramel, rich toffee, molasses, brown sugar, and some dried fruit. Feels medium bodied, smooth with moderate carbonation. Overall a real nice bourbon barrel aged strong ale.
