Collaboration with Omnipollo Brewing
Cocktails like the Mai Tai, Zombie, and Painkiller were born from the desire of mixologists to push the limits of tropical flavors. We've recently introduced some Island-Inspired Seesaws, but when Henok from Omnipollo, a brewer unafraid to test the limits, visited for Field Trip, we wanted to push the concept even further. Brewed with pineapple, pink guava, passion fruit, toasted almond, vanilla bean, toasted coconut, lime, and lactose, Shake Senora is an Imperial Sour Ale partially aged in rum barrels. Presenting a warm bronze color in the glass, Shake Senora offers an intricate array of aromas ranging from juicy pineapple and fresh-shaved coconut to guava nectar and passion fruit. A hint of warming complexity from the rum barrels makes an appearance towards the back of the palate. Cheerfully tart, and deceptively easy-drinking, Shake Senora is a playful reminder of warm, summer days as we inch closer towards winter in New England.
Malt: Pale Malt, White Wheat, Honey Malt
Hops: Hop Extract
Additional Ingredients: Pineapple, Pink Guava, Passion Fruit, Toasted Almond, Vanilla Beans, Toasted Coconut, Lime, Lactose, Brown Sugar

Was looking forward to this, and it did not disappoint. Not like most of Trilliums stuff. Pours orange, with white foam. Good smell of mostly lime, some pineapple and passion fruit. Fair body. Taste is lime forward, passion fruit and pineapple are there.

Notes of citras. Not much head on pour. A decent Sour but not one of there best.

Got this on a lark at Trillium’s Fenway hall. Had no clue what I was getting. I have never had a fruit/wild ale. The closest I have had is a hopped cider.
Pours an opaque orange with a thin head.
Smells like a tart pineapple. Like Tang from from way back.
Tastes fruity with a light consistency and carbonation. Slightly bitter finish. The alcohol content is well hidden.
This could be a good mixer. Add rum ? Ginger?
Happy to have stumbled on to this un-beer brew!
Too bad that is probably a one timer and few of us will be able to try it.
July 2020 - Opened up my other can. It has aged well over the intervening 7 months. The pine apple and mango notes are still strong. And after the beer warms the coconut comes through. It's still a party in a can. Wish Trillium would commit to putting it out once a year!

Really unbelievable as a cocktail beer - love the fruit sharpness against the sweeter notes. Remarkable on how it maintains is overall profile after warming a bit in the glass. Kind of the best mix of a lemon meringue pie and a pina colada

Poured into a tulip, deep amber, translucent, one finger off white dense , small bubble foam cap, good retention, settles to a dense layer, great lacings
Tart aroma on the pour, apple, pineapple, guava
Taste is guava , hint of pineapple, tart but the lactose softened the taste , coconut on the finish
Good beer, interesting , flavorful

Great tropical tiki sour ale, fresh tart pineapple, passionfruit, guava, lime, toasted coconut, vanilla bean and toasted almonds come in waves with some creamy lactose, sweet brown sugar and rum barrel, with some honey cereal malts. Notes reminiscent of pina coladas, guava lime juice with vanilla and almonds, rounded, smooth, balanced acidity with some sweetness.
