As we push further in our development of beer/wine hybrids, the Oenobier series focuses on different varieties of wine grapes while drawing inspiration from the body and drinking experience of classic wines and champagnes. This series is informed by our past work with beers like Stroka, Bug Valley, Terroir Project: Rkatsiteli, and Oenobier's first iteration, which was created with our friends from Monkish.

The golden-skinned French Sémillon grape is regarded for its full-body, yet bright fresh-zested citrus and tropical fruit flavor. A primary grape in the dessert wine Sauternes, Sémillon was once one of the most planted grape varietals in the world.

Pouring an effervescent bright golden yellow, Oenobier: Sémillon presents aromas of fresh pear, lychee, and hand-zested lemon. As the beer opens up, a bouquet of floral notes wash over the palate. Deceptively easy-drinking for 10.8% ABV, Oenobier: Semillon finishes with a gentle acid profile and lively carbonation.

Copenhagen 22/9 2022. 35,5 cl bottle from Mikkeller web-shop. White label with a sketchy drawing of grapes.

Pours unclear golden yellow with some sediments whirling about and a small white head. Disappears after half a minute. No lacing.

Aroma is intense with a subtle sweet scent of ripe pear and peach mingling with a sharp tart sour scent of grapes, lemon and gooseberries. Fermented fruit and alcohol.

Strong carbonation. Thin, oily, lively and tingling texture. Almost fizzy.

Flavor is intense with a medium strong sweetness followed by a strong tart and sharp sourness. Aftertaste is sour. Finish is bone-dry.

Sharp and a bit unforgiving but with an austere vinous charm.

375ml bottle.

Pours clear gold with a short-lived head of white. Zero retention or lacing. Funky and tart in the nose with clove-studded apples and cider vinegar. Light bodied with a crisp, prickly, but almost syrupy mouthfeel. Lemon, soured grapes, and tannic acid on the palate. Finishes sour, acidic, and warming in the throat.

Pours a slightly hazy straw golden yellow with a creamy frothy dissipating white foam head. Smells like rustic barnyard funk, mild horse blanket, toasty hay, woody spice, straw, wine grapes, Semillon white wine, touch of waxy lanolin, fresh pear, zesty lemon, lychee, tart citrus, bready crackery caramelized malty grains, a hint of vinegar, cider, with floral earthy herbal grassy notes. Tastes like gooseberry, passionfruit, juicy white wine grapes, prominent Semillon white wine notes, tart citrus, lemon zest, fresh pear, lychee, waxy lanolin, lightly sweet bready crackery caramelized malty cereal grains, slight vanilla, straw, toasty hay, mild barnyard funk and horse blanket, rustic woody spice, hints of cider, with floral earthy herbal grass notes. Feels a bit oily, medium lighter bodied, rounded and creamy with smooth moderate carbonation. Overall a really great wine hybrid wild ale with Sémillon grape juice.
