Our Fated Farmer Series is a landmark step toward realizing our foundational vision for Trillium: Build a place that intuitively celebrates the intersection of New England farming, agriculture, brewing, and integrated community experience. The grist of each of the dynamic Fated Farmer wild ales is set on the structure of Valley Malt and is barrel fermented in 500L puncheons with our Native New England Wild Culture and aged for 5-7 months, before refermenting on freshly harvested fruit.

Bottled in March of 2019 and enjoying an extended period of bottle conditioning, Fater Farmer: Apricot presents a bright, light straw color in the glass. Pretty aromas of peach mist, apricot preserves, lemongrass, and a kiss of pineapple weave in and out across the palate. Medium-bodied and highly refreshing, this wild ale finishes with structured acidity.

Copenhagen 5/11 2022. 35,5 cl bottle from Mikkeller web-shop. Off-white label with a fine rendering of three apricots still on the tree.

Pours unclear murky golden yellow with a small bubbly white head. Settles as flimsy patches of foam floating in the middle of the glass. A lot of gunk whirling about. No lacing.

Aroma is rather intense with sweet fruity odor mingling with a more overpowering tart sour scent. Apricots and peach. Sour gooseberries, green apples and vinegar. Touch of funk. Sour cheese.

Medium strong carbonation. Slightly thick, oily, soft, lightly tingling texture.

Flavor is intense with a light sweetness followed by a strong, tart sourness. Aftertaste is sour with a redeeming sweet undertone. Lingers for a while. Finish is dry.

Intense, murky and sour piece of Farmer produce.

A 330ml bottle, bottled on 28th March 2019. Poured into a Lost Abbey teku glass.

Appearance: A hazy straw golden colour, with a two finger white head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.

Aroma: Tart, apricot, funky notes, with a touch of pineapple.

Taste: Sour, tart, apricot, light funk, with slightly boozy notes coming through.

Mouthfeel: Medium bodied with prickly high carbonation.

Overall: Sourness is a bit intense and carbonation too high, to fully easily enjoy.

330ml bottle dated 28-MAR-19

Pours a hazy golden yellow with loads of floating sediment, and a creamy dense white foam head with decent retention. Smells like fresh apricots and stone fruit, peaches, cinnamon-esque graham crackery pie spice, some toasty malts, oak barrel, mild hints of vinegar and vinous cider, musty funk, with herbal earthy dusty hops. Tastes really tart and puckery, sour lemon, fresh apricot slices, peach preserves, stone fruit, hint of pie spice, toasty bready wheaty malts, oak barrel, hay, straw, slight acetic vinegary white wine, farmhouse apple cider, musty funk, peppercorn, with earthy herbal dusty hop notes. Feels lighter medium bodied, creamy and rounded, fairly dry with smooth moderate crisp carbonation. Overall a really nice and complex barrel-fermented wild ale with apricots.
