In the glass, Barrel-Aged PM Noche presents dark as its name suggests, with its deep black color emitting almost zero light. The robust coffee addition fills the room with enticing roastery aromas. Notes of dark chocolate, toasted hazelnut, espresso, and caramelized dark fruit prepare the palate for a luxurious drinking experience. It's rich and velvety mouthfeel provides structure for a well-integrated sweetness, bright bourbon highlight, and slightly warming finish.

Drank from a 500ml bottle purchased at Trillium Brewing Company, Boston, MA

Served in a tulip
The dense, oily looking, pitch black body was capped by a film of saddle brown bubbles that quickly broke apart. A frothy collar encircled the liquid, but it too was short lived. No lacing whatsoever.
The aroma was quite roasty. Roasted malts dominated. Deep roasted coffee/espresso notes also came through strong. There was a big boozy quality as well. I had a difficult time pinpointing the bourbon per se however. The coffee presence became sweeter and more fragrant as the beer warmed. Bourbon soaked espresso beans came to mind. Some brown sugar sweetness was also noticeable. Touch of lactose-like creaminess. Bit of vanilla too.
The flavor profile was similar to the aroma. Really roasty and robust. Roasted malts again dominated. Dark roast coffee/espresso was also noticeable but seemed more subtle here than in the nose. A touch earthy. Boozy bourbon notes were apparent. Some brown sugar too. Bit of creaminess and vanilla in the center. Touch of dark fruit character as well. The roast and booze intensified on the back end and the finish. For a 15.6% ABV beer, however, the alcohol was well buried. Like the nose, the coffee presence became smoother, sweeter and more potent with time.
The mouthfeel was surprisingly thin for a beer of this magnitude and also somewhat over carbonated. A fine, fairly zippy effervescence gave the beer a light frothiness on the palate. After a few sips, the liquid deposited a slightly sticky film on my lips. With time, the carbonation settled to a more appropriate level and the beer tuned creamy, slick and smooth.
Barrel-Aged PM Noche is a very solid Trillium X Weldworks collaboration with big roasted malt and espresso notes. Although this fell short of the hype and was rather pricey, I am still glad I tried it.
