Elegant in every way, this pastry-inspired imperial stout presents a silky pitch black. Swirling the glass not only leaves a coating, toffee-colored veneer, but also releases rich confectionary aromas of cassia bark, warm vanilla icing, caramelized brown sugar, and toasted almond. Upon the first sip, Barrel-Aged Danish Gentlemen shows its ample depth, unveiling notes of warm brown sugar, baker's chocolate, fresh-toasted oak, and a gentle warming bourbon character. Medium-bodied with a velvety mouthfeel, a decadent finish lingers pleasantly after each sip.

A - Dark brown pour that's thick and viscous looking. Lots of legs on the glass and oozes down the sides.
S - Vanilla, toasted almond, cinnamon, and slightly alcohol forward.
T - Toasted vanilla, cinnamon, and the elements mix together to create a coconut sensation on the palate. There's definitely a strong alcohol presence but doesn't deter from the beer.
M - Big body, thick, viscous, and lots of warming on the way down.
O - This is a pretty fantastic beer. Boozy ... but fantastic.

Pours a deep thick very dark brown. Opaque with what looks like very small particles. I am assuming this is from the cinnamon. Minimal head.
The aroma is without a doubt an almond Danish. It is spot on. Sweet pastry. Mild amaretto. Boozy bourbon.
Taste follows nose. The barrel jumps out first. It gives way quickly to vanilla, cinnamon and mild almond. The beer is appropriately sweet for the style.
Thick, full body. Not syrupy which is always my worry with pastry stouts.
I enjoy pastry stouts. They aren’t my favourite style by far, but I do enjoy them. When they are good, I really like them. This one is very good, particularly if you like sweet cinnamon.

Served in a tulip
The beer poured a dark brown/black and somewhat thinner than I anticipated. The shimmery, oily looking body was topped by a film of khaki colored bubbles that quickly broke apart. A tiny collar encircled the liquid. No lacing whatsoever.
The aroma was fantastic. Uber rich and complex. Boozy bourbon notes came through big time. Good amount of oaky barrel too. Strong brown sugar presence. Sweet almond notes were also rather prominent. Loads of fresh vanilla. Touch of cinnamon as well. A strong dark fruit quality appeared as the beer warmed. Raisins and plums perhaps. Later, both the vanilla and the cinnamon intensified.
The flavor profile was ripping hot initially. Even for a 15.7% ABV beer, I was definitely not expecting the alcohol to be so potent. Big dark malt presence up front. Rich and roasty. Vanilla came through next. Brown sugar appeared in the center, but the overall sweetness was significantly less than I anticipated. Touch of powdered cocoa. More roast and boozy bourbon notes on the back end and the finish.
The mouthfeel was somewhat disappointing. Oily and slick but thinner in body than I had hoped. The beer contained a fine, subtle effervescence that turned creamy and smooth on the palate. After a few sips, the liquid left a slightly sticky film on my lips.
Barrel-Aged Danish Gentleman is Trillium’s highest ABV beer to date, and both the booze and the barrel notes were front and center. While the sugars in most pastry stouts seem to temper the alcohol heat, the fact that this one was less sweet than typical resulted in an especially boozy beer. Though enjoyable, this was definitely not one of their better barrel-aged stouts.
