Brewed back in November of 2016, this special beer is over four years in the making. Maturing gracefully in one of our oak foeders for the first half of its journey, it was then transferred into a stainless tank where it enjoyed another two years aging upon three varietals of wine grape juice prior to conditioning on the lees. After extended bottle conditioning in our warm room to achieve Champagne-like carbonation, we're finally ready to share it with you.

Brewed with a blend of Pinot Noir, Pinot Meunier, and Chardonnay grapes, three classic varietals used most frequently by France's traditional Champagne houses, this American Wild Ale presents a slightly hazy yellow color with lively carbonation. Bright, vinous aromas delight, offering notes of mineral-driven white wine, muscat grape must, a soft, yet structured oak profile, and a drizzle of clover honey. On the palate, a subtle citrus character compliments our New England native yeast profile in a wonderful way. Tight and balanced, with a well-hidden alcohol presence and gentle tannin profile, Oenobier: Pinot Noir, Pinot Meunier, and Chardonnay's scrubbing carbonation keeps this beer elegant and refreshing throughout.

11.2oz bottle into a Founders snifter. Shared with schen9303.

Pours like champagne. Bright goldenrod with a quickly collapsing, coarse white head. Nose matches the look. Slightly tart, vinous, white grape forward with a good bit of sweetness in the back. Spritzy and lively. Beer opens vinous. I get white grape puree and skin. Dry tartness in the middle with oaky overtones. Slight bit of sulfur and vinous acidity at the finish. Decent. Body is light with ample carbonation. Prickly and lively on the palate and goes down crisp, accented, dry, and refreshing with a clean aftertaste. Solid.

This one definitely straddles the line between wine and beer. It's decent with nice complexity but straddling the line means its not as good as a well made wild ale or white in the end.

375ml bottle.

Pours clear yellow with a short-lived head of crackling white. Zero retention or lacing. Pixie-dusted butter with apples, cloves, and candied pear in the nose. Light bodied with a crisp, thin mouthfeel. Candied apples with white grape on the palate. Finishes sweet and tart with lingering grape juice.

Poured from a 330 mL bottle dated 2/11/21 into a Teku glass. Slightly hazy straw yellow color. Fizzy, continued carbonation throughout my session with it. Some Meyer lemon, straw, bread, white grape must, and banyard funk on the nose. Getting lots of wild yeast flavors, prominent oak, white grape juice, sparkling white wine, lemon juice. This is certainly intended to be a champagne of beers, not to be confused with THE champagne of beers. Hardly any indication of the 11.6% ABV. Thoroughly enjoyable beer - I could see this being a celebration beer of shorts, which I think was the intent.

Pours foggy hazy pale straw golden yellow with a fleeting white carbonated foam head that fizzes down to a ring. Smells biscuity and bready like brioche, some bright fruitiness, barnyard funk, clean lemony citrus, apple, pear, white wine minerality, with floral earthy notes. Tastes so crisp, fresh and nice, fresh wine grapes, juicy crisp apples, lychee, pear, citrus, some tropical pineapple, semi-dry white wine, light biscuity bready notes, subtle oak, chalky stone minerality, hint of barnyard funk, mild spice, with grassy floral earthiness. Feels juicy, crisp, medium bodied, creamy and smooth with moderate high carbonation. Fairly dry with nice fresh fruity flavors that linger on for a quick minute. Overall a really great wine style hybrid wild ale aged on Champagne grapes.
