Collaboration with Burial Beer Co.
This beer is a celebration of shared values and a spotlight on the idea of growth. Incorporating local ingredients into our beers and on our restaurants' plates, thereby supporting a healthier, regional agricultural system is a cornerstone of both company's missions. This Double IPA hones in on that concept, incorporating Tuxpeño Corn grown by David Bauer of Farm & Sparrow in Mars Hill, NC and sourced from Epiphany Craft Malt in Durham, as well as Valley Wheat Malt from our Northeast Grainshed partners in Hadley, MA.
Hopped with Mosaic, Rakau, and Strata, Panicle Initiation pours a sunny canary yellow color with a soft, inviting haze. An initial wave of ripe tropical fruit prepares the palate for notes of lychee gummies, scoops of creamy mango gelato, and sticky pineapple purèe. Mixed berry smoothie, fresh orange slices, and a dank, piney character play auxiliary roles. Pleasantly dry, with a fluffy mouthfeel, and moderately bitter finish, Panicle Initiation finishes with a nuanced, underlying grain profile, thanks in part to the cereal mash we employed for the Tuxpeño.

L - pours a thick shade of yellowy orange, much like pineapple juice. Fuzzy-looking head that stands tall and dissipates quickly. Makes quite a bit of noise as it exits though! Pop rocks.
S - aromas of tart lemon and underripe pineapple. A touch of vanilla cream... lactose? Bready and spicy.
T - bounces back and forth between soft, fulfilling, creamy tropicalia and tangy, zesty tartness. Mixed berries, grapefruit tang, and a grainy pepperiness. Hay? Straw? It's weirdly sour. Finishes bitter and tingly. Feel it in my gums.
F - has quite a nice backbone with some fizzy carbonation up front, but heft and creaminess in the back.
O - what is this... a SIPA? It's a strange beast for sure that's chaotically balanced. Fruity and ripe on one hand, but acrid and bitter on the other. Not sure about the drinkability, but it's certainly an interesting beer.

Picked-up a four-pack of cans at Trillium Brewery in Canton for about twenty two dollars. My forty fourth brew from these guys. This is quite good, very unique taste, due to hop blend.
