330ml bottle
Pours hazy golden amber yellow orange with a dense creamy white foam. Smells floral, fruity, bready, earthy, tart, vinegary, slightly funky, with grassy citrusy hops and caramelized malt notes. Tastes like tart, slightly funky, leathery citrus, stone fruits, apricot, lemon, orange, caramelized bready malts, a touch of sweet vinegar, sprouted multigrain, hay, straw, a touch of peppercorn spice, wildflowers, with floral earthy herbal grassy hops. Feels medium light bodied, creamy smooth with moderate high carbonation. Overall a really great wild ale.

Pours a hazy golden color with a 2F long lived head with heavy lacing.
Smells and tastes of mint, coriander, lemongrass, champagne and ginger with a spicy, tart and warm finish.
Medium light body and carbonation. Brut mouthfeel.
This brew is complex and unique. Well done!

A- Pours pretty much clear from the small bottle into a tulip glass with a pale golden body. The cap on the brew is foamy and rises to three fingers with good retention and some very large bubbles around the glass. Large sheets of lacing with webs in between them drape the glass.
S- Compared to the other brews I have had in this series the herbs standout immediately but that is not to say they are overpowering or overshadowing. The lemongrass and coriander pop off first with a bit of sage atop the solid wild ale base that brings must, tart fruits, lemon, vinous, oaky and slightly funky notes.
T- The flavor gets rather interesting as the herbs bring a nice bitterness to a style that usually doesn't have all that much of a bitterness factor. Bay leaf actually comes through in the finish of a flavor that is lead off by sage, coriander and to a lesser degree lemongrass along with the sour and funky base beer. Toasty oak, vinous grapes, lemon, tannins, slight hay/barnyard funk, orange rind and must.
MF- Really puffy textured and effervescent almost due to the very high level of carbonation. Really fluffs up and is soft and crisp.
The herbs are strong in this brew and find a great balance in the aroma but perhaps are a bit too intense on the taste buds. Maybe my favorite beer series of 2021, I hope Trillium keeps it up with the affordable sours program because most USA sours on the shelves are just weird smoothies now.

It might be the wine glass it's served in, but this was extremely aromatic. Lots of herbal aromas and flavors, especially coriander, laurel, and sage. Very foamy and funky due to the wild fermentation. I'll have to seek out more in this style.

Poured from a bottle into a Teku glass. Translucent amber yellow/orange in color with a bubbly white head that quickly recedes. Getting lots of barnyard Brett-y funk, lemon zest, and hay. Flavors of Myer lemon, coriander, sage, oak, and barnyard funk. I really enjoyed this one and the addition of the herbs really stood out for me.
