The bottle opens with a mighty pffft, but thankfully no eruption. The beer pours a hazed dark orange color with just shy of two fingers of antique white head. Rocky dissipation with some thick, foamy clinging around the edges.
Light hay, light lemon, light sourness, light wood and even lighter funk in the nose.
The taste is lightly puckering, with some lemonhead qualities and an earthy herbaceousness. It’s not an enamel stripper, but is quite lemony. A little wood and funk mixes with the tartness in the finish.
Soft feel with zippy carbonation.
Lemon’s in the starring role here, but there are great supporting characters— particularly the light funk. Very enjoyable.

Pours hazy gold with a half-inch head of white. Moderate retention and lacing. Lemon and grapefruit in the nose. Light bodied with a crisp, effervescent mouthfeel. Grapefruit with minerally lemon on the palate. Tart and mildly acidic. Finishes dry, sharp, and tart.

Pours moderately cloudy hazy amber gold with a lasting dense creamy white foam head. Smells like sour citrus fruits, lemon, orange, lime, some grapefruit, fresh hay, oaky barrel, mild vanilla, crackery bready malt, lemon verbena, some funky barnyard notes, hints of cracked pepper spice, with dusty earthy herbal grassy hop notes. Tastes like fresh sour lemon, dried hay, floral verbena, acetic vinegary notes, fresh citrus, toasty oak barrel, crackery bready grain, mild vanilla, dill, hint of spice, with dusty earthy herbal grassy hop notes. Feels medium plus bodied, creamy with crisp smooth carbonation. Overall a really nice spontaneously fermented wild ale.

A- Pours from the green 500ml bottle to a tulip. The body is a straight golden yellow with a light cloudiness. The head peaks at a finger high with a fine foamy consistency and good retention. A few small sheets of lacing but mostly spotty deposits.
S- The last few Trillium 12oz Wild Ales I have had were very impressive but this aroma really brings heavy gueuze vibes. The balance of funk, fruity and sour aromas is really nice. For me the spotlight aroma is sour stone fruits like nectarine and peach and that is supported very well by barnyard, horsey, cheesy, vinous, musty sour grape, sour apple and smooth oak notes.
T- Thankfully the complexity of the aroma translates nicely onto the taste buds and the sourness is at a moderate level allowing all those subtle flavors to show up. Again, strong stone fruit and lemon vibes up front with sour peach, apricot and nectarine leading off for pale grape, apple and vinous oak notes. The funk of the smell shows up to round it out with musty and barnyard funk hints.
MF- Fluffy textured medium body with a high level of carbonation. Foams up nicely but never feels thin or fizzy as that puffy heft rounds things out.
American sours have always had their own unique feels but lately Trillium has been bringing me closer to Belgium. The key here is a strong sourness but not one that dominates. The beers are complex, fruity, musty and funky with great depth. This brew for me is stone fruit forward with a great base of other interesting flavors and aromas. Gonna go pick up a few more bottles of these, if possible.
