Collaboration with Horus Aged Ales
The Yakima Chief Hops lab team has pioneered cutting-edge analysis techniques with the goal of unlocking maximum aroma potential. There are hundreds of novel compounds present in hops, and the YCH scientists have been attempting to understand which make their way into the finished beer, ultimately contributing to the citrus and tropical aromatics we love. With data from their recent studies at hand, they set out to engineer a hop pellet that "maximizes the synergies between impactful aromatic components, monoterpene alcohols, esters, and polyfunctional thiols." Cryo Pop™ is the explosively aromatic result.
For 2022, we once again teamed up with our friend Kyle at Horus Aged Ales to explore this innovative new ingredient, crafting an amplified version of bierpop! DIPA with elevated hopping rates and increased ABV, Big bierpop! Big bierpop! pours a hazy, deep yellow and wastes no time presenting vibrant notes reminiscent of a pineapple and mango smoothie. The initial burst of tropicality clears the way for supporting aromas of summer picnic watermelon, peach rings, and citrus slushy. A generous portion of flaked wheat lays the groundwork for a fluffy mouthfeel, allowing bierpop! to finish medium-bodied with just a touch of candied sweetness.

Poured into a 16 oz Teku glass not sure when it was canned. Pours a hazy yellow orange with a half finger sticky white head that leaves thin streaks of lace with nice retention. 4.25
Aroma is mango, passionfruit, tangerine, papaya, honeydew, and apricot. 4.5
Taste follows mango, passionfruit, tangerine, papaya, honeydew, and apricot really well balanced. 4.5
Mouthfeel is above average, not sticky or dry, soft gentle carbonation, and at 8.8% rather large flavor, but easy going down. 4.5
Overall a collaboration with Trillium and Horus you would expect something impressive and this one is certainly that. 4.5
