Drank from a 1 pint .9 fl oz (500 ml) bottle purchased at Trillium Brewing Company, Boston, MA
The beer poured an insanely viscous and oily looking complete pitch black with no true head. Some saddle brown bubbles sat stop the liquid, and they soon transformed into a thin, frothy collar. There was no lacing whatsoever.
The aroma was interesting initially and transformed as the beer opened up. Raisin notes came through big time. Rich, sweet and also somewhat savory. Moderate amount of oxidation. The nose definitely had a sherry-like quality to it. Brown sugar also came through strong. Roasted malts were noticeable as well. Good dose of boozy barrel too. Some chocolate fudge was also detectable. As the beer sat, the oxidation intensified and notes of wet cardboard appeared. Later, the oxidation came and went in waves.
The flavor profile was similar to the nose but somewhat rougher around the edges. Roasted malts came through strong up front. Nice caramel malt sweetness as well. Brown sugar was also noticeable. Boozy bourbon notes and some oaky barrel appeared as the beer moved along the palate. Vanilla came through in the center. Nice creamy sweetness. More boozy bourbon, roast and oxidation on the back end and the finish. Some sweet, raisin-y, sherry-like notes lingered after the swallow.
Excellent oily, viscous, full-bodied mouthfeel. Slick and smooth on the palate. The liquid contained a super fine, subtle effervescence that worked nicely. After a few sips, the liquid deposited a slightly sticky film on my lips.
Of the three beers Trillium released in this late November drop (Barrel-Aged Dusk Trill Dawn, this and Barrel Aged Oh, Nuts!), only the latter was truly impressive (even though it was devoid of any nut presence). Trillium described this as a barrel-aged imperial stout that contained smoked malts, but the smokiness was undetectable and sherry-like notes were a bit overwhelming at times. All in all, my feeling on this beer were rather mixed.
