New England’s natural ecosystems ground Trillium with a sense of place. Our Habitat family of spontaneously fermented ales is a personal reflection of our terroir. Brewed using local New England malted barley and raw wheat, with aged hops, these beers rest overnight in our coolship, where they are inoculated by the native microflora unique to the area we inhabit. After years spent in oak prior to thoughtful selection and blending, we present our interpretation of the complex interplay between regenerative agriculture, unspoiled native lands, and centuries-old practices and traditions.

Blended 1/10/23
I haven’t had much of anything Wild from Trillium, and even the few I had I have not reviewed, but I do tend to think they’re pretty good at the funk game. This 5 year blend sounded like a no brainer when I was picking up some beers here last week. Let’s pop it open and see what it has to offer
Pours a cloudy orange gold with 3 fingers of soapy off white head that slowly fades to a cap and leaves minimal lacing
The nose on this one is just straight up funky. I’m picking up on aromas of crabapple, lemon juice, wet hay, sharp oak, white wine vinegar, earthy wheat, pear skin, light white pepper, and a touch of blue cheese
It leans into a more earthy vibe in taste, but the funk still sneaks in there. On the front end of the sip I’m tasting lemon zest, apple skin, sharp oak, tannic white wine, wildflower honey, earthy wheat, stone, abd light white pepper. The swallow brings notes of tannic white wine, crabapple, crackery malt, earthy wheat, lemon zest, white pepper, sharp oak, stone, and light leather
A light medium body pairs with moderate carbonation, resulting in a sharp beer. Finishes bone dry and refreshing
Oh yeah, this one is damn good. I wish Trillium would do more with this Wold Ale program, or at least that the general population was more accepting of it

Pours a cloudy hazy orange gold with a dense creamy lasting white foam head. Smells like toasted hay, horse blanket, barnyard funk, dusty aged earthy floral hops, some lemony citrus, apricot, sweet vinegar, hints of bready wheaty malt, oak barrels, with a hint of peppery spice. Tastes tart, sour and acetic, complex, with sweet vinegar, lemony citrus, some apricot, bready wheat malt, woody oak barrels, toasted hay, dusty earthy herbal floral aged hops, barnyard funk, horse blanket, with a hint of peppery spice. Feels medium-full bodied, creamy smooth with moderate low carbonation. Overall a really great 5-year blended spontaneously fermented wild ale.
