Premier wine grapes sourced from world-renowned viticultural regions impart uniquely elegant sensory traits to our Habitat series of spontaneous ales. Our 2023 5-Year Blend was refermented on the Pinot Noir varietal from Willamette Valley in Oregon.
New England's natural ecosystems ground Trillium with a sense of place. Our Habitat family of spontaneously fermented ales is a personal reflection of our terroir. Brewed using local New England malted barley and raw wheat, with aged hops, these beers rest overnight in our coolship, where they are inoculated by the native microflora unique to the area we inhabit. After years spent in oak prior to thoughtful selection and blending, we present our interpretation of the complex interplay between regenerative agriculture, unspoiled native lands, and centuries-old practices & traditions.

Pours cloudy hazy amber pink red with a dissipating thin foam head. Smells complex and funky, tart and fruity with notes of red natural wine, rosé, cranberry, strawberry, cherry, raspberry, plum, dusty aged earthy herbal hops, toasty hay, oak barrel, horseblanket, bready doughy wheaty grains, slight vanilla, and peppery spice. Tastes like low tannin red wine grapes, tart red fruits, fresh cranberry, raspberry, strawberry, red cherry, plum, pink grapefruit, rosé natural wine, some toasty hay, bready doughy wheaty grains, oak barrel, slight vanilla, horseblanket, aged earthy hops, and peppercorn spice. Feels medium plus bodied, juicy with smooth moderate carbonation. Overall a really great 5 year spontaneously fermented wild ale blend aged in oak with Pinot Noir grapes.

Feels medium plus bodied, juicy with smooth moderate carbonation. Overall a really great 5 year spontaneously fermented wild ale blend aged in oak with Pinot Noir grapes.

Pours a fizzy 1/2 finger pinkish head with lower retention, no lacing, mostly clear slight sediment light ruby to amber color
Nose starts with funk, plenty of souring bacteria funk and some Brett barnyard like, lactic acid creamy yogurt like, possibly acetic, plenty of juicy light red wine, general fruity and funky lambic like, vanilla and buttery oak
Taste starts with more funk, again very lambic like, more lactic and acetic acid, a bit creamy lacto, fair tartness in general from acidity, plenty of fruit, juicy red grape and wine, also bramble raspberry like, light red wine and a bit of a direct pinot like character, vanilla and buttery oak with that, a bit of tannin, nicely balanced blend, maybe a tad watery on the back end, fair flemmy finish
Mouth is med bod, bright acidity fair flemmy finish, med to lower carb
Overall a nice blended gueuze like wild
