Nonna's Cookies is a new Barrel Aged Imperial Stout, brewed in collaboration with Vitamin Sea Brewing (Weymouth, MA). Inspired by cookies made by Dino (The owner of Vitamin Sea) and JC's families, Nonna's Cookies is conditioned on a blend of almond, cacao, and vanilla; notes of milk chocolate and toasted nut take the lead with undertones of charred raisin rounded out by a full, thick body with a moderate sweetness.

Served in a tulip
The beer opened with some foam pushing up over the lip of the bottle. On the pour, the liquid appeared super viscous and just a shade lighter than pitch black. A super dense and creamy, finger-tall, saddle brown head topped the body and slowly dropped to swirls atop the liquid. A wall of craggily lacing blanketed the glass and stuck around until the drink’s end.
The aroma was outstanding. Vanilla came through big time. Fresh vanilla bean specifically. Loads of powdered cocoa as well. There was a nice punchy almond or amaretto quality too. Fairly sweet and boozy. Oaky bourbon barrel notes were also detectable. The amaretto intensified as the beer warmed.
The flavor profile was similar to the nose. Big powdered cocoa notes up front. Lots of caramel malt and toffee character too. Good dose of vanilla in the center. Roasted malts appeared on the back end and in the finish. Moderate amount of lingering dry, oaky bourbon barrel character.
The mouthfeel was fantastic. Rich, creamy and full bodied for the style. The liquid contained a fine, fairly zippy effervescence that fluffed up really nicely on the palate. By the drink’s end, the sugars in the beer left a slightly sticky film on my lips.
Nonna's Cookies is an outstanding pastry stout with a nice bourbon barrel-forward aroma and flavor profile and an equally big mouthfeel. Some people say that Trillium have lost their way lately, but this beer is proof that they still produce some bangers.

Bottle from trillium. Black color with dark tan head. Thick. Oil.
Warming bourbon and chewy, wet oak. Light charred barrel. Fudge, cocoa, almonds, and caramel. Vanilla sweetness. Thick, but smooth. Very flavorful.

Pours pitch black with a dense creamy lasting brown foam head. Smells like rich cacao chocolate, fresh creamy vanilla, toasted nutty almonds, some raisin, dark fruit, milky caramel, toffee, brown sugar, hints of amaretto, marsala, mapley rum, woody oak bourbon barrel, rocky road cookies, with mild earthy hops. Taste follows with even more boldness and strength, strong sweet pastry and dessert flavors that remain balanced within the barrel aged imperial stout. Feels medium-full bodied, thick and creamy like a milkshake, with smooth moderate low carbonation. Overall a real great barrel aged imperial stout with almonds, cacao and vanilla.
