This new barrel aged Imperial Stout, brewed in collaboration with our friends at Omnipollo (Stockholm, Sweden) takes inspiration from kanelbullar, a type of Swedish cinnamon bun, and is made with a blend of coconut, cardamom, vanilla, and Vietnamese cinnamon. Full-bodied and slightly warming, Kanelbullar leads with a bouquet of spice with undertones of bourbon and wood and a moderate sweetness.

Served in a tulip
The beer poured the blackest of blacks and super syrupy and viscous, like used motor oil. A thin, finely beaded cap of burnt sienna colored froth topped the liquid, but it quickly broke into a fine, lasting collar. There was no lacing whatsoever.
The aroma was outstanding. It was super rich, sweet and complex but also somewhat savory. Cardamom notes came through big time. Loads of fresh vanilla bean too. Good dose of fragrant coconut as well. Some cinnamon was also detectable. Beneath all the adjuncts was a dense, malty base. Big caramel malt presence. Dulce de leche came to mind. Dark fruits were apparent as well. Raisins were most prominent. As the beer warmed, both the cardamom and the vanilla notes intensified.
The flavor profile was also impressive but not quite as smooth or as enjoyable as the aroma. Super malty and robust. Nice melding of sweet caramel malts and savory roasted malt notes. Cardamom came through strong on the front end. Lots of cinnamon too. Vanilla was noticeable in the center along with some fresh coconut. Big, boozy, bourbon barrel notes appeared on the back end and crescendoed in the finish. I definitely tasted all 14.4% in this beer. More deeply roasted malts a touch of char lingered after the swallow.
The mouthfeel was phenomenal. It was insanely dense and full bodied. The liquid contained a super fine, moderate effervescence that fluffed up beautifully on the palate and reminded me of heavy whipping cream.
Trillium consistently make some of the best pastry stouts in the country, and Omnipollo are highly regarded for their ability to think outside the box. Together, this collaboration showcases the best aspects of each brewery.

Smells like dark chocolate, mapley bourbon barrel, raisins, cinnamon, vanilla, slight coconut, sweet floral cardamom spice, sticky buns, cinnaroll, toasty roasted malts, with mild earthy hops. Tastes real rich, sweet, dark and decadent with spiced cinnamon and cardamom notes, vanilla, toasted coconut, nutty caramel, hints of maple, toffee, bourbon barrel, dark chocolate, subtle dark fruit, raisins, roasted malts, with mild earthy hops. Feels medium full bodied, thick and smooth with low carbonation. Overall a nice imperial pastry stout.

Cinnamon up front. Fudge, coconut, next. The cardamom doesn’t dominate but it’s there. Chewy wet oak, charred barrel, bourbon. Molasses, dark fruits. Vanilla cake. Very interesting mix of flavors, but I love the cinnamon highlight. Cinnamon roll vibes.
