The second of our 2025 Habitat releases blends spontaneous beer produced by Trillium with spontaneous beer produced by de Garde Brewing in Tillamook, OR. Leading with aromas of peach and apricot, Habitat: Reflet shows complex undertones of hop and funk with a dry mouthfeel and moderate tannic structure

500ml bottle blend date 2/20/2025
Pours cloudy hazy glowing bright amber orange with a dense creamy frothy white foam head. Smells a bit vinous and fruity with bruised apple, apricot, acidic lemon, earthy, natural and wild with peppery cinnamony clove-like baking spices and a leathery streak with old woody oak, toasty hay, wheat malts and dry aged hops. Tastes real complex and tart, vinous, cidery, a bit acetic with notes of apricot, acidic lemon, bruised apples, pear, orange citrus peel, dusty old woody oak barrel, subtle leather, slight barnyard horseblanket funk, toasty hay, straw, biscuity wheat malts, multigrain, peppercorn baking spice, and dry herbal earthy grassy floral aged hops. Feels medium plus bodied, creamy smooth with moderate carbonation. Overall a really great spontaneously fermented oak aged wild ale blend.
