Fermented in our oak Foeder with a house blend of yeasts and acidifying cultures, then aged on blueberries, blackberries, and blackcurrants. This beer has been our longest endeavour, a multi-year project aged until it was exactly what we wanted, a blend showing off the depth of fresh oak and ripe fruit, with complimentary acidity.

Hazy light red-brown color, it looks like an oxidized and unclarified apple juice. The head was a medium froth of bubbles that disappeared in seconds. Too hazy to see the carbonation directly, but there is a high froth of small new bubbles appearing at the surface. No lacing.
Very interesting mix of scents. Funky sour over everything, but then some apple, strong oak, and some nose biting spice. Swirling the glass kicked up a very light barnyard for a couple of seconds and then more sour funk. Overall the smell is milder than many other sours.
Lots of different flavors battling for dominance. The first to hit was a light sweetness followed by a stronger tart. Then the fight for attention started. Oak and tannins. Black tea. Various overripe fruits: apple, stonefruit, and strawberry. Traditionally brewed soy sauce and salt. Mild cheese. Black pepper. Funk going madly off in all directions. The oaky tannins re-surge in the finish. The aftertaste is mostly the sour funk and oak. Overall the flavor is milder than I expected. There is nothing that overwhelms the senses, but the oak does tend to linger a long time after swallowing.
Stronger tongue tingling at the start of the glass, but this de-carbonates quickly. Makes a light foam but feels a bit oily. Slightly astringent, probably from the tannins.
This is a strong contender in their "Top Shelf" series. I prefer their offering "FIVE", but many people would prefer the oak, tea, and overripe fruit in this. This was aged on lighter berries, but FIVE has more of a berry flavor while this has more apple and stonefruit. Very complex scent and flavor. The flavor continually evolved as it warmed in my mouth. From the description they were aiming for a Gueuze Lambic, but this has more oak, tea, and tannins than other Gueuze Lambics I have tasted. Pretty high ABV, so it is best to share with a friend who has similar tastes.
