To celebrate our seventh anniversary, we crafted a product of time and patience. Utilizing live cultures living in our oak foeder, this beer slowly fermented into a rich and sour beer that we then matured on red currants. Currants lend this beer their bright balance of fruity, berry sweetness and tart acidity.

Cloudy pink-orange-tan color. Poured a pale pink medium height head that dropped back to a small patch of foam in one and a half minutes. Too cloudy to see the carbonation level, but foam was rising in the bottle after removing the top. Left no lacing.
Starts with a sour funk smell and then the red currant fruit smell popped out. Very light malt smell would come and go. Swirling the glass kicked up a stronger (darker?) funk.
This is just beyond tart to a light sour flavor; not quite puckering. Interesting funk that is stronger than a typical Fruit Lambic and more like a straight Lambic. Light touch with the fruit that works very well with the base Lambic funk. There is just a hint of something sweet, despite currents being incredibly sour. Maybe the sweetness is coming from the malt. Light malt shows up as it warms up. The aftertaste is a lot of funk and some mild bitters. The label says there are no hops, so the bitters are probably coming from the currents. The current fruit flavor shows stronger in the aftertaste.
Mild tongue tingling. Basic coarse foam. Gets a bit gummy. Mildly astringent.
I'm really enjoying these special numbered one-off brews. They must be having a lot of fun in the brewery. I can imagine them working their way up to an Oude Geuze in the near future.
