DATE: May 24, 2019... OCCASION: a bid accepted (again), I sip in celebration of hopefully finding our new home... GLASSWARE: Duvel snifter... pours a peach amber body, fizzing and swiftly descending into a ho-hum ring of pebble-like bubbles... body is opaque but vibrant with bubbles rushing upward around the glass--attractive but not a picture... pineapple, mango and papaya sour the nostrils with an intense rake... spearmint, cilantro, herb garden, and bitter root speak for the sour aspect, making this a powerful mix of citrus fruit and rugged earth... thin-bodied, fast to the throat, sharp, tart and lasting... the teeth rattle with its hop-heavy profile, while its back end--lacking much balance--embraces a juicy, acidic pull that demands salivation... its acidity cannot be overstated and may not be for the faint of palate... penetrating tropical fruits, dank resin, and, punchy spicy herbs are the taste triad here--not much funk, but a rather clean finish makes for a sippable drink despite its tartastic attitude... the ABV on this is understated but still substantial, allowing for an over-the-top puckering consequence... the IPA aspect doesn't hit as hard as hoped for, but three chefs could make for a more muddled brew; as is, a nice creation from two brewers I have tasted before (DC, Icarus) and one I was just introduced to...
