Thanks to my cousin, Emily, for this bottle. Served in an Indie Ale House Stout Night snifter.
A - A quarter finger of tan foam quickly sizzles to a thin collar and some stray wisps. Not much in the way of lacing. Dark brown body that is light for an 'imperial' stout but acceptable for the listed 7%.
S - Brett character is pretty potent; it's that plasticine and musty flavor. There is a hint of orange and cherry; I didn't realize there was fruit in this though on my initial inspection. Oak, roasty, and a bit of zesty citrus acidity as it warms up.
T - The flavor is more cherry stout, with less of the funky brett character initially. Dark chocolate, black forest cake. The finish is a mix of roast, funky yeast, and bitterness. No obvious alcohol.
M - Medium body, lower carbonation. Soft and creamy texture. Actually pretty good heft for 7%.
D - Why not just make a non-infected stout. This Ontario obsession with brett is getting tiring. Please, please, please perfect your regular stouts before monkeying with wild ones. Still, fairly drinkable and one of the better takes on this 'style'.
