Described as an oak aged sour black ale on Ohio grown peaches.
Pours like a black wine, with a dark purple hue and muddle peach edges. I initially noted no head when having on draft during the release, but this poured with a very large tan head at home, after tearing off the uncooperative cork, and leaves a persistent half finger blanket of soft tan foam with branches of lace on the glass.
There is a slight hint of chocolate and cherry on nose, with a surprising amount of roasty notes, even for a dark sour. The aroma is just divine. Hint of funk, peach is coming to the fore more, some sesame.
The taste is not full on tongue searing sour nearing vinegar like Tart of Darkness, instead it collaborates well with the base stout allowing room for the original roasted malt and chocolate flavors. The sugars and flavors of the peaches have transformed into something else, as it is not specifically detectable to me. A little acetic, woody, highly drinkable. Just delicious.
This is nice, tart, and semi-dry. As it warms, Plume becomes slightly nutty, with some notes of bleu cheese and tobacco.
