Paying homage to the years of traditional brewing in Belgium, we started out with a famous yeast strain which expresses just the right amount of dried fruit and subtle spice which is then complemented by the dry hop of Czech Saaz hops.
Right before bottling we dosed the tank with one of our favorite brettanomyces strains, whose character’s amplifies the dried fruit and adds a touch of funk.
Drink this now for a hop-forward Belgian blonde, or save for a couple of years to watch the wild yeast takeover and evolve into something even more special.
