We have about two dozen neutral oak barrels that we use for the extended fermentation and aging of wild/mixed-culture beer. We brew what closely resembles a Saison base beer, then transfer to these barrels where they are introduced to a blend of saccharomyces and brettanomyces yeasts, plus a healthy array of souring bacteria.

Over the course of sixth months to a few years, these barrels each begin to develop their own unique character. We taste through them and construct a blend of specific barrels to achieve our desired character. For Apropos we selected four barrels from our stock to construct a beer with a low acid profile, but pronounced funk. We then added the equivalent of two pounds per gallon of apricot, then dry-hopped with Ekuanot a few days before packaging.

Hazy orange, initial layer of foam and a thin collar, spotty lace.
Apricot is present at first, but then the Brett comes out and it goes into a weird cheddar popcorn direction. Taste is tart and fruit forward, juicy apricot, underneath is a lingering Brett funk of popcorn kernels (THP), and trace acetic acid.
Medium bodied and tart with light carbonation. The acetic acid and popcorn kernel notes get a little fatiguing over time. Worth a try, but somewhat flawed.
