To construct this beer, the team went through all of our barrels, tasting and dissecting each to put together a beer greater than the sum of its parts. It consists of three different neutral-oak Saisons, a solera-method Foeder Saison, and fresh Pilsner introduced at bottling. There’s a vernal liveliness to this beer, laced with notes of fresh lemongrass, oak, stone fruit and hay. Several months of bottle conditioning further expanded its funk dimension, while also bringing a soft, delicate carbonation that only brings these characteristics out even more. Its acid profile is intentionally mellow, allowing this beer to never overstay its welcome on your palate.

Golden murky body with a clean pour. Smells of sour and rustic oak, white grape, clementine, orange skin, barrel funk and light artisanal soap, strong and a bit clumsy. Taste is another story, while the oak is nice but the other dominant flavors are sweaty socks and funky soapy water with dying flowers and citrus, no thank you. Feel is funky, lightly sour, pungent, and medium bodied. Not for me
