Picked all three of the Chisel Tip beers up at Interboro about a month and a half ago, as I hadn't been there in quite some time. I was intrigued by these given that it was different from their more hopped offerings and thankfully, this first bottle that I cracked open met my expectations. Not terribly strong, fruity, or tangy, there was enough to love here from the get-go as it was more reminiscent of what their neighbors in Grimm would release!
Good pour to this as the liquid was a light beer with some raspberry thrown in for good measure. Lots of sediment in the liquid as this was certainly a Wild Ale! The uneven head settled quickly and quietly as there wasn't any lacing left behind on the side of my pint glass, with just a few bubbles lingering for the duration. Lots of Brett, raspberries, and yeastin the nose as the taste contained some wood, acetate, and funkiness to round things out. Balanced, lively, and smooth, this wasn't as Wild as other examples of the style that I've had over the years as the fruit wasn't very tart and the hint of feet lingered well into the aftertaste...
The booze was hard to find as well as the flavors present were allowed to shine over any alcohol that was detectable on the palate. An underlying outdoorsy feel tied everything in together but in the end, this was a nicely crafted and enjoyable beer that didn't OD on the yeast or the funk. Can't wait to have the other two bottles!
