In Feb 2021, we set off to brew a very complex and time consuming barrel aged imperial stout with our friends at Barreled Souls and Coles Road Brewing.
First, we created a pitch black imperial stout recipe with our favorite roasted malts and loaded it with black strap molasses.
After fermentation we aged this dark beauty in Mexican sherry, Jamaican rum, and bourbon finished red wine barrels. It rested for exactly 1 year.
It was then racked into Litchfield Distilling bourbon and maple bourbon barrels for another year before being blended with a fresh batch that was double chocolate conditioned on toasted Tanzanian cacao nibs.
