Chirality is our first mixed culture, barrel aged, bottle conditioned beer. About 3 years ago our friends at NOLA brewing traveled through Houston and we got together with them to brew a dark sour with the goal of creating something that tasted like a chocolate covered piece of fruit without adding fruit. We fermented it with sacc, brett, lacto and pedio, and then racked it away in ex- Burial in Space barrels for over 24 months. The beer has a subtly sweet, yet present acidity that we think embodies that goal. It is extremely drinkable, yet highly carbonated so we recommend chilling it in the fridge for 24 hours and immediately pouring upon opening.

I love this style of beer, dark sour ale. This is a good one!
Purchased a bottle of this beer at the brewery recently. Poured into a tulip glass. Rich dark brown color with a creamy light brown head and great curtain lacing. Sour, earthy smell and taste. Tart dark fruit and dark roasted malt. Some sweet dark berries. Toasty and funky. Very nice full feel. Very smooth and easy to drink.
I wish I had purchased a couple of bottles!
