The production of sour beer might seem a mysterious process but is in fact science. Nevertheless a process where you try to control as many factors a
possible, but there is always an uncontrollable element. This beer started as our annually produced Easter wheat beer but was transformed during a secondary frementation and maturation in red wine barrels for almost 4½ years. The golden coloured sour blond ale has a fruity strawberry-like aroma with a slight balsamic feel giving way to earthy funk, oak tannins and malty biscuit undertones. The beer finishes with a crips and quenching acidity.

Copenhagen 1/4 2022. 37,5 cl bottle from Dammbergs Ølmagasin, Kingosgade, Kbh. V. Clear green bottle with a transparent plastic label with a sketchy outline of a duck.
Pours unclear - almost hazy - golden yellow with a small white head. A bit bubbly. Settles as thin, patchy layer of foam struggling to cover the surface beer. No lacing.
Aroma is fairly intense with a sweet fruity odor mingling with a more prominent sour scent. Peach and green apples. Elderflower. Touch of sugar. Citrus and gooseberries. Tart and sour.
Light carbonation. Slightly thick, oily, lightly tingling texture.
Flavor is intense with a light sweetness followed by strong tart sourness. Aftertaste is tart but also a tad watery. Surprisingly strong sweet undertone. Finish is semi-dry.
Tart but not without sweet charm.
