The common sharpness of hops and roast often proves too much for the uninitiated beer drinker, but tempered with the taste of honey offers a softer and more friendly palate for the willing and the eager.
Black honey pours a dark brown, just a shade off of black. Capped with a rich light mocha lather, the scent spills over with burnt citrus, toasted pine needle and a kiss of honey sweetness. Its taste leads off with the honey, caramel and light smoky sweetness that brings out the beer's chocolate and coffee earthiness.
Robust sweetness seems like buckwheat honey as its lingers gracefully underneath the hops and roast. White grapefruit, pineapple, orange peel and lemon take on the expected grilled character while trending grassy like prairie fire and with the smoldering resins following closely behind. Bitter with seared citrus and tropical fruit peels, the coffee-like char brings its own bitterness that allows both the hops and char to reach a bitterness that neither is capable of reaching alone.
Medium-bodied, the lingering sweetness keeps the taste and texture firm and floral. Its light stickiness is as charming as it is at taking attention away from the showcase of hops. Trending roasty, toasty and slightly burnt, the honey's floral nuances also returns in a long afterglow.
